“Our philosophy when it comes to employees is simple; hen Kimberly Coult-Walden started Forest Shadows Pet Resort in 2004, at that time she already knew that she wanted to provide pets with a place
that felt like home. Built on the site of her own former home, Forest Shadows is a comfortable, clean and fun escape for pets on vacation. The expansive property includes three buildings that are home to grooming facilities, luxury suites for dogs and cats of all sizes, with separate indoor and outdoor play areas for big and small dogs, and a full-size pool with a large grass play yard that includes misting fans for pups to cool down and splash around in as they play. Kimberly’s passion for helping animals has been a part of who she is since childhood. She carried that passion through to her classroom, where as a teacher, Vice Principal and Principal at David Elementary in The Woodlands, where she included animals in her curriculum and time as an administrator. These pets ranged from the ordinary to exotic who often graced her classrooms and schools. “As a child, my dreams were to be a veterinarian and a teacher,” Kimberly said. “I fulfilled my dream of being a

Throughout his 15-year career in the pet industry, he has gained valuable experience being a veterinarian technician for 5 years, and managing luxury pet resorts the rest of that time. Michael has also worked with a variety of animals and loves each and every breed from dogs, cats, birds, fish and reptiles. At home Michael has 4 dogs, turtles & tortoises and a yellow nape Amazon, named Patty. Michael oversees daily operations at Forest Shadows and takes his responsibility seriously. He enjoys building a team that works together towards one common goal, and a great team truly makes a difference in the service that we provide. What makes Forest Shadows different, in his opinion, is the hands-on leadership and constant drive to keep innovating and improving care for each pet that spends time at Forest Shadows.

Raechel started out as a Big Dog Daycare Counselor. While this is a fun job, she learned every dogs’ personality and can read their behaviors, thus keeping daycare safe. Her passion and love for animals really stands out as you watch her work. Raechel’s desire and willingness to learn and loving heart have really made her stand out at the Resort. Rachael always strives to make every pet have a safe, successful stay. Now starting her third year as a supervisor, she has learned all there is to know at every level of care in order to keep your pet safe and happy. Her willingness to go above and beyond has really shown as it has not been unusual for her to drive back to check on a dog or because she forgot to cover one with a blanket at closing. She graduated from the Veterinary Technician program at Lone Star College Tomball, and loves building a relationship with each pet she meets at Forest Shadows. Raechel enjoys spending time with her family & friends when not at the resort.
The groomers at Forest Shadows are experienced with over 50 years of combined experience, and are able to offer professional, show quality grooming services to pamper your pet. In the heart of Montgomery sits an unassuming garage with a classic truck out front proudly announcing that it is the home of God’s Garage. If you live in the area, you’ve probably driven past it 100 times, never wondering what went on inside. It is in that garage that Chris Williams and his team of mechanics and volunteers help to provide single moms, widows, and wives of deployed military with safe, reliable transportation. The garage began to serve the needs of the community after Williams spotted a mother and

her daughter walking along the side of the road one evening. When he stopped to make sure they were okay, he was shocked to find that he knew the family from church. Knowing that this need was felt in the community and there were few resources to help address the problem, Williams founded God’s Garage. The non-profit charges nothing for labor, and helps to cover the cost of parts, while also accepting donations to help keep the garage running and open for women in need. The team has become
a well-oiled machine, and the garage is pristine. It’s clear from the moment that you arrive on site that this is a place where teamwork takes center stage. As the garage has grown, so have the number of applications for help.
Williams and his team are dedicated to their mission - they’ve hosted garage sales, and are planning to host movie nights to help bring in much-needed donations. Every aspect of the garage is community centric, and their care and commitment is contagious.
“We’ve received a lot more applications and cars that need servicing,” Williams said. “We are always in need of volunteers and donations. We’re also expanding our services. Currently any applicants who are selected to receive a car have to pass a budgeting class, and we have seen what a difference that can make in someone’s life. We are trying to meet the needs as holistically as possible, and so we’re going to be launching parenting classes and life skills classes.”
“More than anything I want people to know that together we can do great things,” Williams said. “I hope that everyone will get involved in the community in one way or another, even if it isn’t with God’s Garage, because it is so important to help lift our neighbors up when they are in need. That’s what this is all about.”

By Linda Bauer, co-author of Recipes from Historic New England Photos by Steve Bauer, co-author of Recipes from Historic New England I am constantly asked, “Where do you go on vacation?” I almost hate to respond because I do not want everyone to follow me. However in over thirty trips to Bermuda I still agree with Mark Twain, “you can go to heaven if you want, but for me I will stay right here in Bermuda.’ The best and most affordable way in my opinion is one I repeat each and every year. A flight from IAH to Boston is just over three hours and a short cab ride to the Lenox Hotel is just the beginning of ten days of delight. The Lenox is a family owned and operated boutique hotel in a great location. This historic beauty is staffed with some of the best in Boston and offers a unique pantry chock full of wonderful items that you may have forgotten or just desire. The lobby is most welcoming and the lovely well appointed rooms overlook the Back Bay and all it has to offer. They have a delightful Irish pub, Sola’s, with lobster rolls and other fine offerings. We were so happy to dine out of the city with friends at Kowloon and had three of their lobsters all served cut up with many different flavors such as scallions and ginger, spicy and so many others. The next day I enjoyed my favorite lobster place on the waterfront - Hooks and they are the suppliers to Kowloon. I am happy to share that you can walk off the calories on the Freedom Trail and when you get tired I highly recommend the Old Town Trolley Tours with local guides sharing amazing trivia and stories of their beloved Boston. Our favorite was that you can enjoy a cold Sam Adams at Beantown Pub across from the Granary Burying Ground while looking at the real cold Sam Adams! The second night we enjoyed the amazing Fairmont Copley Plaza Hotel, the choice of Holland America Line, where they offer accommodations to guests sailing to Bermuda. The lobby is memorable with chandeliers and halls reminiscent of Versailles. The location is superb and a ride on the Swan Boats for only three dollars is just a short walk from the hotel. Do not miss the wonderful and very popular Oak Long Bar dining room, which offers sharing plates such as avocado and crab toast, small plates like tasty and full bodied “chowda” and one of the best lobster rolls in the city. Finish it off with an

amazing chocolate dessert for a very memorable night. In two days I had four different lobster meals and all were amazing. The Fairmont Copley is featured in two of our books on Historic America and numerous readers have commented on what a fine hotel experience it offered. On Saturday a short cab ride to the pier allows guests to soon enjoy all that the Veendam has to offer. I like to carry on my bag and before the boat drill am already unpacked and ready to have fun. By Monday at noon the ship is sailing into the beautiful Bermuda waters and the pastel homes are a delight for the eyes. The white rooftops are used to collect drinking water. Bermuda has no rivers and only a few fresh water wells. Thus the settlers began collecting their drinking water from the famous rooftops and have constructed gutters to direct the water and fill up an underground tank through a filter making water that is safe to drink. This was my first time to witness strong rain the first day and morning of the second and since Bermuda had been in a severe drought I was happy for them. Instead of going to the beach the first day I watched a new, first run movie as I did each day in the theater of the ship. Then a relaxing day in the spa retreat reading a good book while enjoying the heated tile beds and overlooking
Front Street was part of the charm of the Veendam. I highly recommend the HAL wine tasting also for fun and a chance to make new pals. Thus I still was able to go up the hill each day and catch one of the inexpensive pink and blue distinctive Bermuda public buses, which are full of visitors, locals, school children and one of the best things about Bermuda. Soon I was at my favorite beach to spend hours riding the waves and viewing the luxurious scenery of pastels, the blue ocean, and glorious Longtail birds overhead. Wednesday nights in Hamilton offer a closed Front Street to cars and soon tents, shops, food stalls and all types of fun enables locals and passengers to enjoy a bit of Bermuda. Sometimes a special event occurs and this time it was a Colombian tall ship, Gloria, docked next to the Veendam offering tours, fun and a great way to talk to the crew. Many guests to Bermuda are enamored with the friendliness of the locals, the happiness of the island, the British influence and beauty of Bermuda or they simply enjoy a Bermuda Buggy Ride. Others love the many different beaches, the Royal Dockyard Museum, the Crystal Caves and the charm of St. Georges with the stocks and the Fort at St. Catherine or the wonderful ferries.
one or more days as a way to spend the time seeing all parts of Bermuda since there are not rental cars but you might enjoy a scooter rental if you are good with driving on the other side of the road and are able to navigate the roundabouts. I love the way the Veendam is able to dock in Hamilton due to its smaller size than the huge ships that go to the dockyard. I also am partial to the way Bermuda is not only easy to reach from Houston, but also allows a mini vacation in Boston before the cruise. Four beach days are very affordable on local buses while enjoying the fun, food and Veendam amenities, and by dinner on Saturday night one is home from what is a magical time in heaven!

Use a box of no-bake cheesecake and follow the instructions to make it. Top with the cherry pie filling. Once you’ve made the cheesecake, wrap it in plastic wrap and place in the freezer for at least two hours, or overnight. Use a melon baller to scoop out balls of frozen cheesecake. The key is to scoop a little bit of crust, cheesecake, and topping in each bite. Melt some candy melts according to the package. Use a spoon to carefully dip the frozen cheesecake balls in the melted chocolate. If your bites get too warm pop them back in the freezer for ten minutes. They are much easier to dip if they are frozen. Top with a drizzle of white chocolate or sprinkles. Chill until you’re ready to eat.
Try adding other flavors of pie fillings, jams or Nutella. Or keep it simple and skip the filling.

Heat champagne, sugar, and corn syrup in a small saucepan on medium/high heat. Bring to a rolling boil, making sure all the sugar dissolves and stirs in. Remove champagne from heat and stir in pomegranate juice. Place in the freezer for 2 hours to chill completely (or place in the fridge overnight). Once cold, pour the mixture into your ice cream maker and use according to package instructions. Spoon completed sorbet into a freezer friendly container and freeze until ready to serve. It’s best to freeze 4-6 hours so it firms up enough. Serve with whipped cream and pom arils if desired. Enjoy and CHEERS!

Preheat your oven to 325° In a large bowl, sift together the dry ingredients. Make a well in the middle of the dry ingredients, and then pour in the wet ingredients. Mix until well combined. Pour the batter into the cavities of your donut pan until ⅔ full. Bake in the oven for 10 minutes, and then allow them to cool in the pan for another 10 minutes. Pour 1 tbsp oil into your candy melts, and then microwave in 30 second increments, stirring in between, until smooth. Dip each donut into the candy melts, and then top with sprinkles and set aside until the candy melts harden.

In a medium mixing bowl, beat the whipping cream at high speed until stiff peaks form. Set aside. Gently melt the white chocolate in a small pot over low heat or in 30-second increments in the microwave at half-power, stirring frequently. Using the same beaters you used to beat the whipping cream, beat the cream cheese and 1 tablespoon of powdered sugar until light and fluffy. Beat in the white chocolate, vanilla extract and salt on medium speed until well combined. Fold in the whipped cream. If it’s not combining easily, you can use the mixer to beat it in on the very lowest setting, just until combined. Do not over beat! Taste the mousse and if it’s not sweet enough, fold in a tablespoon or two of powdered sugar until the mousse is sweet enough for your liking. Serve immediately or refrigerate for 1-2 hours for a firmer version. Refrigerate any leftovers for up to 2 days.

2 large eggs, room temperature 3 large yolks, room temperature 1 teaspoon finely grated lime zest 1 teaspoon fresh lime juice Topping: 1 cup passion fruit juice 1 teaspoon fresh lime juice 1 ½ teaspoons powdered unflavored gelatin
2 tablespoons sugar pulp and seeds from a fresh passion fruit Mango Coulis: ¼ cup passion fruit juice ½ cup diced fresh mango (about ½ a mango) 2 tablespoons sugar ½ teaspoon fresh lime juice
Cheesecake: 1. Position a rack in the middle of the oven and preheat to 325°. Brush an 8-inch springform pan with a light coating of canola oil. 2. Puree the mango and passion fruit juice in a food processor until smooth. Add cream cheese and continue to process until smooth. Add sugar, yogurt, and cornstarch, pulsing to combine. Then add the eggs, lime zest and juice and pulse to combine. Take care not to overmix the batter. Pour batter into the prepared pan. 3. Bake the cheesecake until the outside of the cake is set but the center is still a little loose, about 45 minutes. Turn the oven off and open the door to let out some heat. Close door and continue to cook the cheesecake in the residual heat in the oven for 20 minutes. This gentle finish minimizes the risk of the dreaded crack in your cheesecake. 4. Run a knife around the edges and cool to room temperature, about 1 hour. Cover and refrigerate for 1 hour. Topping: Put about half of the passion fruit juice and all the lime juice in a medium bowl and sprinkle the gelatin over the surface. Don’t stir. Set aside until the gelatin “blooms”, about 1 minute. Boil the remaining passion fruit juice and all of the sugar in a small saucepan until the sugar dissolves. Whisk the hot juice into the gelatin mixture until smooth. Refrigerate until just begins to set, about 20 minutes. Stir in the fresh passion fruit pulp and seeds and pour over the top of the cooled cheesecake. Refrigerate for at least 8 hours or overnight. Mango coulis: Puree the passion fruit juice, mango, lime juice, and sugar in a food processor. Bring cheesecake to room temperature 30 minutes before serving. Remove the springform ring. To serve, dip a knife in warm water, wipe dry before slicing each piece. Serve with mango coulis.

Set aside. In a medium bowl, combine brown sugar and ¼ cup cocoa powder. Sprinkle over cake batter in pan -- DO NOT STIR. Top with hot water -- DO NOT STIR. Place pie plate on an old baking sheet (in case it bubbles over) and bake for 35 minutes until top is dry and puffed -- the sauce underneath will be runny. Let sit 10-15 minutes to thicken before serving warm with ice cream.

Line the bottom of a 8x3 inch round cake pan with wax paper. Take halved ladyfingers & arrange them around the sides of the pan, sugar side out. Cut vanilla bean in half lengthwise and scrape out the seeds. Put both the vanilla bean and the seeds in a pot with milk and bring to a simmer on medium-low heat. Whisk the egg yolks and ¼ cup sugar in a bowl until pale. Remove the vanilla bean from the pot and slowly whisk your milk mixture into the bowl. Return the entire mixture into the pot, and stir until the mixture is thick enough to coat the spoon. Pour into a bowl. Mix gelatin in with ¼ cup of water in a small, heat-proof bowl. Place dish in a pan of hot water and stir until the gelatin dissolves completely. Stir gelatin into the custard, and mix well. Beat cream, remaining sugar, and vanilla extract until soft peaks form. Fold cream into custard mix, and also stir in about 6 ounces of raspberries (more if you desire). Place the entire bowl in fridge for three minutes. Take it out, stir it, and place it back in fridge for another three minutes. When it is almost set, take it out and carefully spoon the entire mixture into cake pan. Cover and refrigerate for at least three hours. Open cake pan to un-mold. Place the remaining raspberries on top of custard mixture and finish with confectioners sugar & grated dark chocolate. Best served chilled.

Preheat oven to 350˚. In a large bowl combine the cocoa powder with the hot water and whisk until smooth. The hot water will “bloom” the cocoa powder and bring out its best flavor. Add the sugar, vegetable oil, eggs and vanilla and whisk until smooth. Set aside. In a smaller bowl, whisk together the flour, salt and baking powder. Combine the dry ingredients with the wet ingredients, slowly whisking until combined. Line a 12-cup muffin tin with brown muffin papers, and fill each well ½ way full. Bake for 18-20 minutes until a toothpick comes out clean. Allow to cool completely. Meanwhile, prepare the frosting. In a bowl, combine the whipping cream, powdered sugar, espresso powder and vanilla. Whip with an electric mixer until stiff peaks form. Transfer to a pastry bag fitted with a decorative tip. Pipe a generous mound of frosting. Then garnish with chocolate shavings made with a bittersweet chocolate bar and rasp grater. Top with an espresso bean. Refrigerate until ready to serve.

Beat yolks and sugar in stand mixer on medium high for 12 minutes or until white and thick. Add vanilla and mascarpone, beat until just combined. Transfer mixture to a bowl, set aside. Clean bowl and whisk. Beat egg whites until stiff. Fold ⅓ of the yolk mixture into the egg whites. Then gradually fold the remaining yolk mixture in and mix until just combined. Mix coffee and liquor together. Quickly dip biscuits in and line the bottom of a 8” square dish. Spread over half the cream, then top with another layer of coffee dipped biscuits. Spread with remaining cream. Cover and refrigerate for at least 3 hours, preferably overnight. Dust with cocoa powder just before serving - either before you cut or after placing onto serving plates.

Crust: 1. Preheat oven to 350°. Combine the all-purpose flour, whole wheat flour, egg whites, agave nectar, and almond butter in a food processor. Pulse until a ball of dough is formed. 2. Using hands, combine all dough into one large ball. 3. Set out 4-4” tart pans on a baking sheet. 4. Divide dough into four equal pieces and place into each of the tart pans. Carefully press the dough into the bottom of the pan until it’s about a ¼-inch thick. Press the dough up along the sides of the tart pan, being careful to ensure the dough is pushed into each of the scalloped edges. Dough should reach above the edges of the tart pan. Holding a knife horizontally, trim off the excess dough that reaches above the tart pan. 5. Bake for 12-15 minutes. Once crusts have baked, set them on the counter to cool for about 15 minutes. Filling: 1. In a large bowl, combine strained Greek yogurt, Neufchâtel, vanilla extract, and powdered sugar. Mix with a hand blender until filling is smooth and creamy. 2. Pour filling into each of the cooled tart crusts and place in the refrigerator for about 45 minutes to allow the filling to set and become firm. Fruit: 1. Cut the kiwi in half lengthwise. Place flat-side-down on the cutting board for stability and cut ¼ inch half-moon slices. 2. Cut the stems off the strawberries and then cut the strawberries in half. Cut a triangle-shaped notch from the top of each strawberry half to create a heart shape. 3. Remove tarts from fridge and remove tarts from their pans by pushing the removable bottoms up and out of the pans. 4. Arrange kiwi slices, raspberries, and blueberries on each tart. Top each with a heart-shaped strawberry. 5. Refrigerate for 15-20 minutes to allow tarts to re-set. 6. Keep uneaten tarts refrigerated.

Valentine’s Glass Topper Cookies Cookies: 6 cups all purpose flour 2 cups room temperature salted butter 2 cups white sugar

Cookies: 1. Line baking sheets with parchment paper. In a bowl whisk together the flour and baking powder. 2. In a stand mixer, cream butter and sugar together. Add eggs and vanilla, mixing until combined and smooth, scraping sides of bowl as necessary. With mixer on low, add in the flour mixture and combine until the dough comes together. 3. Divide dough into 3 sections and on a floured working surface roll dough to approx 1/4” thick. Using your desired cutter(s) to cut out shapes, placing on baking sheet 1 1/2” apart. 4. Place cookie sheets in fridge for 20-30 minutes to chill your dough. 5. Preheat oven to 350° and bake chilled cookies for 8-10 minutes depending on size of cookie. Let cool on baking sheet for 5 minutes and transfer to wire rack to continue cooling. Icing: 1. In a bowl combine milk and powdered sugar. The consistency should be that of a thick syrup. Stir until there are no lumps. Add food coloring, if desired. 2. Let icing rest for 5 minutes to allow for air bubbles to rise to the top. Give the icing a gentle stir to break up any air bubbles that formed. 3. Place a wire rack over a bowl and position as many cookies that will fit over the bowl at once. Pour icing over the cookies, allowing the excess to drip into the bowl below. Set aside to firm up for 6 hours, or overnight, until completely dry. 4. Make the arrows using colorful straws and construction or craft paper, pierce the center of the cookie placed over a glass of milk and serve.

Come help the community celebrate the Spirit of Arbor Day with Village Tree Planting – a Growing Township Tradition. To continue this spirit, The Woodlands Township holds a Village Tree Planting in February. The first event recruited 25 volunteers, and last year there were over 350 participants. And for the upcoming Village Tree Planting,The Woodlands Township Parks and Recreation Department will again recruit close to 350 volunteers to help. Volunteers range from young kids to retirees. For the halfday commitment, volunteers will help with digging, spreading soil, planting the seedlings and watering. thewoodlandstownship-tx.gov
The theme of this year’s gala is “Enchanted! A Masquerade Ball”. They promise this will be a magical evening as you dance the night away while making happy endings for kids! This one evening will allow them to provide trained Advocates for over 200 children in the foster care system – children who’ve been removed from their homes because of abuse or neglect. All the money raised stays here in Montgomery County.
