A Family Legacy at Your Table There is a historic brick building on South Main that is constantly abuzz with activity. Be it first-time visitors drawn in by the inviting aroma of spices floating through the air, or regular customers who know exactly which shelf to go to for the right spices to accompany their pot roast.

husband John then purchased the shop from her parents about four years ago. "I remember coming here with my mom when I was a teenager," Carol recalls. This generational legacy is one Carol holds dear to her heart and many of her customers have been coming to the shop since the early "Molly and Ray" days when the original owners ran the store. This family business is now a part of countless family meals across the St. Charles and St. Louis area.

"Working in our store is like working at Disneyland," says Olde Town Spice Shoppe owner Carol Hurst. "The patrons are happy because they're gathering ingredients for meals with their family and friends, and I love hearing the store chatter. Customers will talk among themselves about their favorite tips and recipes, their favorite items in the store." On Saturdays there is a line of customers snaking through the store, selecting their ingredients for family meals and buying gifts for housewarmings and parties. She's used to the hustle of customers and isn't stunned at all by the steady stream of visitors on a weekday afternoon.

"I had a lightbulb realization about two years ago," she smiles. "Our spices and foods were literally on thousands of Thanksgiving tables. What an ultimate place of honor to be part of the days where you break bread with family and friends; as you enjoy family recipes handed down through the generations and remember those who are no longer here. I can't think of a better reward for a business like ours."

"We are part of this community and are one hundred percent invested in the Saint Charles area," she affirms. "We live above the shop, so we're about as 'small business' as it gets!" This dedication to Main Street is part of what makes her shop so popular each day; cooks and bakers of all skill levels know to come to Carol for advice and guidance with their dishes. "Since everyone eats, we have the privilege of seeing just about everyone in the metro area. We see occasional cooks and avid cooks, restaurant chefs, hunters, bakers you name it!"

The St. Charles community knows that Olde Town Spice Shoppe is the place to find exactly what you need for a recipe. "Grocery stores have evolved to have fewer and fewer ingredients. We carry everything you need, even hard-to-find ingredients," says Carol, gesturing to the many carefully-labeled shelves stocked with hand-packed spices. Whole vanilla bean, saffron, and hartshorn - or Bakers Ammonia - are just a few of the many elusive ingredients the shop keeps stocked year-round. When it comes to spices and ingredient combinations, Carol and John discover how, through their world travels, to season even the most unusual dishes. They have visited countries all over the globe, trying dishes in the outback, South Africa, Malawi, all over Europe,

Carol is not only invested in the community, she's devoted much of her life to the shop and its success. Established in 1984, the Olde Town Spice Shoppe was bought by her family in 1994. She and her

Carol's priorities for the shop are to offer affordable products of the highest quality and to be a completely green store, a quality not often seen. "We use recyclable, BPA-free plastics for our spices and teas. We no longer use plastic grocery bags and we recycle 99.9% of our waste. We don't even have a trash service, it's all recycled." This extraordinary care reflects their respect for the community and the earth that they traverse. Alongside the hundreds of spices, a hearty collection of teas, salsa, hot sauces, popcorn, dips, gifts, and more are available throughout the store. The workers at Olde Town Spice Shoppe are often seen selecting items from shelves with a basket in hand, fulfilling online orders from across the country. Local companies and customers often request gift baskets made for clients and out-of-town visitors, filled with items everyone can enjoy while boasting the flavors and hometown charm of Saint Charles. Carol supports the Arts in Saint Charles because creating meals is in art within itself. "You gather together your meat, fruits, vegetables and you design with passion and love. The arts are about expressing yourself, whether you are creating with a paintbrush, a potter's wheel, or a spoon," she explains.

"We support the arts because it's the creative spark that gives life meaning, which keeps moving us forward." Everyone is welcome at Olde Town Spice Shoppe Monday through Saturday from 10:30am - 4:30pm and on Sunday from noon to 4:30pm. Discover a Cardinal Sin in Saint Charles

Only two miles from the St. Charles Convention Center, tucked down a suburban artery between a storage facility and subdivision of modest St. Charles homes sits one of the best craft vodka distilleries in the country. Sharing a building with a frozen custard shop, you’d be hard pressed to know what magic is being wrought behind the oversize garage door that hides St. Louis Distillery from the busy street, but much like Microsoft, Apple, and Google, great things can have their small start in a garage.

St. Louis Distillery, the brainchild of 3 neighbors, Bill Schroer, Greg Deters, and Steve Herberholt, is the producer of the exceptional Cardinal Sin Vodka and Cardinal Sin Starka. I spoke with Bill Schroer on an unseasonable February afternoon at the distillery to hear the story of how this whole project began and get a lesson in the science of distillation. “We knew #DiscoverSTC

people that made wine, we knew people that made beer, but nobody we knew made their own spirits. We thought we'd be the coolest kids on the block if we had our own distillery. We started here about 5 years ago. It's just been in the last year that we've had our retail license where we now can open up to tours and tastings and sell it directly here.” And it has been a busy 5 years for St. Louis Distillery. In 2016, they were voted as the Best Craft Vodka Distillery by USA Today, beating several other St. Louis Area distillers. This is just the most recent accolade in a string of other wins in craft spirit competitions. “We got 4 gold medals in the first 4 contests that we entered it into.”

this in a book anywhere, but the barrel gives up the character very quickly.” While you can buy both Cardinal Sin Vodka and Starka throughout the St. Louis area, the tour and tasting includes some flavored varieties only available for sale at the distillery. I had the pleasure of trying some of the one-off products available, including the Vanilla Starka. Bill explains how this flavor experiment came to be, “We have fun with our Starka. For instance, our first barrel we made Starka in, when we emptied it, we put a gallon of vanilla into that barrel, sloshed it around on the staves, and then filled it with vodka. We've been aging that now about 3 and a half years. We'll pull about 5 gallons off every several months and bottle it.“

The facility itself is relatively small, and for those who have been to other distilleries they will notice how compact the equipment is. Missing are the fermentation tanks that produce the initial grain mash that gets distilled into the final product. Bill explains, “I went to Trailhead Brewery which is in downtown St. Charles and talked with them. They are already masters at doing fermentation. Their initial equipment, the mash tun, sits idle a lot of the time, so we work with them and they do our mash for us. So while we don't do the fermentation, 100% of our product is distilled here on site.”

In addition to the Vanilla Starka, other flavors only available at the distillery include a Seville Orange, Calhoun County Peach, and Toasted Barrel Starka with a slightly lighter, more subdued flavor from the original. Bill explained the thought behind the Toasted Barrel Starka, “It's not near as dark, it's golden in color compared to the brown of the Starka. It's got a very different flavor than what the Starka does. I've been talking with a couple of restaurants that have whiskey flights, so they'll have 3 different Irish whiskeys to taste the difference between the three. I'm thinking just have these 3 (vodka, toasted barrel, and charred barrel starka) there. Obviously color contrast is huge, but then, what you're really tasting is the barrel experience, to see how much the barrel changes things.”

The transformation from this grain mash into vodka happens in a compact, 40 gallon batch still. While other distilleries are dominated by enormous copper tanks topped with towering columns where the alcohol condenses, St. Louis Distillery’s still looks like a stainless steel water heater. “This is a high tech unit that we discovered by a guy in Washington State. We ended up with what we think is the 2nd one of these in the country. There are probably only 15 or 20 out there right now. Instead of these plates every six inches, these columns, obviously not twenty feet tall, are packed with a copper mesh. We can accomplish in basically 5 and a half feet instead of this 20 foot column.”

I asked Bill his favorite use for Cardinal Sin Vodka, “The Starka is really good on the rocks with a slice of orange, but it's really good in any of your classic whiskey recipes. It makes a great old fashioned, new fashioned”. St. Louis Distillery offers a unique experience for St. Charles. Tours of the facility and tasting room are available on Friday through Sunday from 1:00 pm – 6:00 pm. Tour and tasting takes about an hour, with both groups and walk-ins welcome. Groups up to 30 can be accommodated by emailing [email protected]. The tour is open to all ages, provided minors are accompanied by an adult over 21 years old. Samples are for adults only. Send the kids next door for a custard.

The clean lines and efficiency of the equipment is reflected in the taste of the vodka. On par with any top-shelf premium vodka, Cardinal Sin is exceptionally smooth, with a hint of sweetness at the end. “(We) like vodka. From a business standpoint you don't have to age it. You don't have to put it in a barrel for 20 years and hope your grandchildren appreciate the business that you started for them.”

But St. Louis Distillery doesn’t shy away from the barrel for their other main product, Cardinal Sin Starka. “We are the first barrel aged vodka released in the United States. We put our vodka into a brand-new, level 3 char Missouri white oak barrel. The same thing you would use for bourbon aging just to see what happens. The story is, and the word 'starka' comes from the Polish word for stork, that if you make your own vodka, when your daughter is born you would take an old wine barrel, fill it with vodka, bury it in the backyard, and serve it on her wedding day. So all 3 partners, we all have daughters, we all like that old world romanticism tale.” A relatively short barrel aging of 6 months produces a unique look and taste to the Starka. “The whiskey maker puts it in the barrel because he needs the barrel to smooth it out and give it some character. We put a very smooth product into the barrel. We didn't need the barrel to smooth it out, we just wanted the character. And where we got lucky is, we didn't know this ahead of time, didn't find

Discover The Foundry Art Centre Art is what is produced at the Foundry Art Centre. Formerly a train car factory for the American Car & Foundry. The City of Saint Charles decided to save the nearly one hundred year old building and after extensive reconstruction, the Foundry Art Centre was opened in 2004.

The Foundry Art Centre has a large space dedicated to juried art. A theme is chosen periodically and artists submit pieces for consideration. Artwork is submitted from all over the world. Only a certain number will be chosen based on adherence to theme, creativity and quality of work. The works of local and international artists are displayed. It is amazing to see the many different takes each artist has on a specific theme. The theme when I visited was The Nth Degree. Each artist expressed the theme in their media of choice. Creative process and material intertwine into a completed work that only that artist could envision before its conception. Enjoy wondering about the artists concept while questioning the idea. Art is about questioning and provoking thought. It is about the feeling you get when you look at a project. Art is personal and universal all at once. Take time to experience each piece, something may click and you may see something you never thought you would.

After you spend time in the gallery, climb the stairs that take you up to the artists studios. Fourteen artists keep their studios at the Foundry Art Centre. There are painters, photographers, potters, and a mosaic artist. If the door is open, feel free to walk in and talk with the artist. “This is an interactive studio,” one artist said. “If the door is open feel free to walk in and speak with any artist.” She was working with a student that enjoys coming on a regular basis to create under her guidance. Most of the artists hold classes to share their craft with others. The artist teaches their techniques, while letting the student express themselves. One artist I spoke with, Jim Carlson in Studio Four, was more than happy to show me around his studio. His excitement for his art was infectious. He went from piece to piece explaining each one and how they were made. He was a potter, with beautiful works. However, he also had a very whimsical side as well. He had many pottery whistles that he also makes. Each whistle resembled an animal of some sort. Most with a very distinct style with big eyes and a large nose that was the blow hole for the whistle.
