Obituaries Margaret Annette (Neppie) Bettinger, of Lyndonville, N.Y., passed away on Dec. 14, 2016, at Medina Memorial Hospital Skilled Nursing Facility in Medina, N.Y., at the age of 96. Neppie was born Dec. 29, 1919, the daughter of Lawrence and Sarah (Potts) Bettinger. She graduated from Sandy Creek High School in 1938, and obtained a BS from Ithaca College in 1943, followed by a Masters of Education in 1954 from the University of Buffalo. In addition, she studied at the University of Wisconsin, Syracuse University, SUNY Buffalo, and San Francisco State College. Annette’s career as a teacher of Physical Education and Health spanned many years and included jobs at Tully Central School, Tully, N.Y.; Madison, Wis.; Cleveland Hill High School in Cheektowaga, N.Y.; and Kenmore, N.Y., Public Schools. At the college level, she taught Physical Education at the University of Buffalo and the State University College at Cortland. From 1962 through the early 1980s, she was employed with the NYS Education Dept.; taught at the NYS School for the Blind in Batavia, N.Y.; and for one summer at Syracuse University She also moved to Louisville, Ky., to become a Research Assistant and Consultant for Development & Evaluation at the newly established Instructional Materials Reference Center for the Blind. Upon retirement from her work with the blind, Neppie moved to Lyndonville and had a log cabin built. In 2007, when she was no longer able to live alone, she moved in with Sarah Brinsmaid, her best friend of more than 60 years, and remained there until February 2013, when she entered the nursing home. Neppie (Nip, as Sarah affectionately referred to her) and Sarah traveled the world together in their later years. She loved playing bridge; all animals big and small; the New York Yankees; politics; and had an unquenchable thirst for knowledge. In February 1999, Neppie was chosen as one of two representatives from NYS to the Silver Hair Congress in Washington, and in May of the same year, represented Orleans County as NYS Senior Citizen of the year. Neppie is survived by her nieces: Nancy (Bill) Bennett of Sandy Creek, and Carol (Vern) Gilmour of Ogdensburg; nephews: Wil (Judy) Bettinger of Wilmington, Del., and Ron (Karen) Bettinger of Ogdensburg and Jensen Beach, Fla.; and also by several great- and great-great-nieces and nephews. By Douglas H. Domedion I let Kay, our little Jack Russell, out on a her rope on the back porch the other morning to do her business. Next thing I know she is trying to get Indoor cats make great pets! under the wheelchair ramp to the back porch and then suddenly a cat, that some irresponsible person must have dropped off, came charging out from under the ramp spitting and slashing at Kay. Fortunately Kay didn’t receive any damage before the cat took off or I would have had to take her to the vet and then ended up with good bill to have her checked out as I have no idea if this cat had any shots or any diseases. Cats make nice house pets and they are relatively easy to take care of. However when left to roam freely outside they become a problem to wildlife, are susceptible to diseases and even a threat to our health. It is estimated that cats kill over 2 million birds in the U.S. every year plus an even higher total of small mammals. Yes, they kill a lot of mice, rats, voles and shrews, but they also kill mammals as large as rabbits and squirrels. I know you’re thinking “Well, killing mice and rats is a good thing,” but not always. When they get to roam free out in the fields and woods they are taking food away from native species like hawks, owls, foxes and etc. Some species like the endangered Short-eared Owl and Northern Harrier depend on those small mammals so free roaming cats are taking away food from native species that are already having problems surviving. By nature a cat is a instinct predator, triggered by movement such as a mouse feeding in the grass or a bird hoping around on the ground. This is why cat owners have “movement” toys for their cats. My son has a cat that just loves to chase a feather Jeff has on a string and stick that is swung around for the cat to chase. This same instinct is what triggers a cat to attack and kill when he sees a bird outdoors even though he maybe fat and well fed. He may even catch a bird or small mammal and bring it home but not eat it. Killing birds and small mammals is not the only problem a free ranging or feral cat can cause. They are great disease carriers with several that can effect humans. Rabies is of course a real concern as it is fatal and with cats that are free ranging we have no way of knowing if that animal has had a recent rabies shot. A bite can transfer that virus to humans without them ever knowing until it is to late. Another disease of concerned is toxoplasmosis, which can cause infections to humans. It is a parasite that is found in cat feces and can cause headaches, fever, sore throats and muscle pain to healthy folks but is of particular concern to pregnant women and those with compromised immune systems. Still another is bartonellosis, also known as “cat scratch fever.” Infection can be given by a cat licking, sneezing, spitting or biting or scratching another cat or human. In humans it can cause fatigue and fever, headaches and pimple-like bumps on the scratch site. Ringworm is a fungal infection cats can transferred to humans or other animals by spores that are left on dishes and bedding. These spores can remain active for up to a year which makes it a difficult disease to eradicate. Feral cats and free-roaming cats are a problem today for the above reasons and because their populations are growing especially in the bigger cities. A program of “Trap, Neuter and Return” is being tried in some cities but doesn’t seem like a good control. I mean having the type of management for dogs instead of licensing, required shots and owner responsibilities wouldn’t be very effective so why should it work for cats. Come to think of it, why don’t we have the same deal for cats? How come cat owners are not held responsible for their pets or required to license them and have updated shots? Maybe if that was the case we wouldn’t be seeing so many feral cats. As it is now many folks get a cute kitten, have them for awhile and then decide they don’t want them any more and dump them off somewhere to be a problem for someone else. Cats make nice pets but they need to be taken care of properly just like any other pet. Cats either need to be kept indoors and controlled when left outdoors. I have friends who let their cats outdoors but they either use a leash or cage type pen to control them. Oh wait a minute, that takes a little effort. Folks who really like their cats are just asking for trouble if they let them run loose where foxes, coyotes and diseases can get them. The folks that “dump” them off when they are tired of them should have never got them or any other pet in the first place as they are just not mature enough to accept responsibility. HOLLEY HIGH SCHOOL STUDENTS INTERACT WITH THEIR COMMUNITY THIS HOLIDAY SEASON In late November, Holley High School students volunteered to set up the elementary primary gym for the Holley Days of Shopping event on Dec. 1-2. The students worked with social worker Samantha Zelent to bring donated gift items to the elementary school, sort them into categories and arrange them on tables, floors, shelves and the stage so that district families could shop for holiday presents. The shopping event helped 53 families, including 141 children, receive gifts this year. Any remaining items went to the Community Center. “A big thank you to those who donated their time, money and/or gifts to make this event so wonderful,” said Erica Bailey, elementary school social worker and coordinator of Holley Days of Shopping. “All who attended were very appreciative of the opportunity. Several stated that without this support, their children would not be receiving gifts this year. I am proud to be part of a wonderful district that truly cares for its community.” Many of the students who volunteered their time at the shopping event are part of the new Interact Club at Holley Middle School/High School (MS/HS). This group is sponsored by the Holley Rotary Club. About 30 students in grades 7-12 have joined in its first year. Their focus is on volunteer work at both local and global levels. They have already volunteered at the Rotary Beefeater dinner, and shopped and wrapped presents for seven Holley children, using money provided by the Rotary Club. They are assisting teachers at the elementary school, and they will help with a spaghetti dinner in January to benefit a Holley family. They plan to volunteer at a soup kitchen soon and conduct a prom dress drive in the winter for the MS formal dance. They’re also planning a book drive in the spring, where books will be shipped to children in another country. Rotary member John Heise is the Rotary Club liaison and Holley MS/HS Social Worker Samantha Zelent and art teacher Evinn Neadow are the staff advisors. “Whatever volunteer work the students want to do or ideas they have to help, we make it happen,” said Zelent, who is Heise’s daughter and very familiar with Rotary Club efforts over the years. “This is a great opportunity for students to interact with the community, and it empowers them to help meet some of the needs they’ve identified in their environment that need support.” Zelent has been excited to see so many students who want to participate in the Interact Club. She has also been happy to see the support from Holley alumni to provide donations for the Holley Days of Shopping and to sponsor about 30 students this holiday season. “Former students who have graduated in the last five years have been contacting me asking how they can help,” said Zelent. “Many of them are still going to school or just getting started in their careers, but they still want to give back. Isn’t that fantastic? We live in such a caring community.”

Successfully Fend Off Workplace Fatigue Fatigue can prove a formidable foe to anyone. Exercise enthusiasts and couch potatoes alike periodically can suffer from fatigue, which can affect performance at work and one’s relationships with friends and family. Fatigue can be temporary or chronic, and while quick fixes like an energy drink might work for a little while, such solutions may only mask fatigue for a brief period before it returns once the stimulant wears off. Many times fending off fatigue involves making some lifestyle changes that can boost your energy over the long haul and make fatigue a distant memory. • Eat breakfast no matter what. According to a study published in the International Journal of Food Sciences and Nutrition, a high-fiber, high-carbohydrate breakfast can increase alertness between breakfast and lunch, a period of time during which many professionals begin to feel fatigue settling in. Whole-wheat toast or a bowl of high-fiber cereal can pack an energetic punch that lasts all the way to lunchtime. • Choose high-energy snacks. One of the problems many people have when dealing with fatigue is how they choose to combat their feelings of sluggishness. Eating a candy bar from the office snack machine might seem like the ideal energy booster, but a sugar boost does not last very long. Chances are your feelings of fatigue will return sooner rather than later. • Give yourself a break. Burning the midnight oil might be necessary, but failing to take breaks throughout the day will likely exasperate any feelings of fatigue. That’s because taking periodic breaks throughout the workday has been proven to be very effective at combating fatigue. A study conducted at Louisiana State University compared a trio of different work schedules for workers who used a computer. Those who took brief, frequent breaks were better at fighting fatigue and more productive at work than those who did not. A short break of 5 to 10 minutes can be enough to provide an immediate energy boost and fend off feelings of fatigue. • Hit the road, Jack. Another way to effectively fight fatigue is to get walking. A decades-old study conducted by a researcher at California State University, Long Beach, found that walking briskly for 10 minutes provides people with more energy than eating a candy bar. Though the candy bar led to an initial energy boost, that boost died down within an hour, whereas the boost provided by a brisk walk increased energy levels for roughly two hours. Get up and walk around the office or take a brisk walk around the block or the parking lot of your office complex. You’ll come back to your desk refreshed and ready to resume your workday. Fatigue is no laughing matter for many men and women. But a few tried and tested fatiguefighting methods can increase your energy and productivity.

Chanukah is a Jewish celebration that lasts for eight days and nights and commemorates the victory of the Maccabees over the Greek-Syrian ruler Antiochus IV Epiphanes roughly 2,200 years ago. Chanukah is called the “Festival of Lights” in recognition of the day’s supply of oil that somehow burned in the temple for eight days. Chanukah celebrations are rife with tradition. Families eat latkes and sufganiyot, which are fried in oil to commemorate the miracle of the oil. Children are rewarded for their Torah studies by receiving Chanukah money and presents during the eight-day celebration, which also includes a recitation of the entire Hallel. Individuals light a special nine-branched candelabrum called a menorah. In ancient times, oil was used to light the menorah, but nowadays many Chanukah celebrants use candles to light their menorahs, which are typically placed in prominent spots in their homes.

Grape Tomato and Blue Cheese Tart Serves 6

Crust: 1 cup all-purpose flour 4 ounces cream cheese, chilled and cut into 1/2- inch pieces 8 tablespoons unsalted butter, chilled and cut into 1/2- inch pieces 1/4 teaspoon salt 1/8 teaspoon cayenne pepper Topping: 4 ounces creamy blue cheese, finely crumbled 2 cups grape tomatoes, halved length-wise (see note) 2 teaspoons olive oil 1 teaspoon balsamic vinegar Kosher salt 1 1/2 tablespoons chopped flat-leaf parsley 2 green onions, chopped to include 2 inches of the green parts

3. For the topping: Sprinkle the cheese evenly over the crust. Arrange the tomatoes in a circular pattern and in a single layer over the cheese, cut-sides up. You may not need to use all of the tomatoes. Whisk together the olive oil and vinegar and drizzle over the tomatoes, and then sprinkle with salt. Place the tart on a baking sheet to catch any drippings and return to the oven and bake until the cheese has melted and the tomatoes are hot, 10 to 12 minutes. 4. Cool the tart for 5 to 10 minutes and then remove the sides of the tart pan. (The tart can be made 3 hours ahead. Leave the tart cool at room temperature and reheat in a preheated 350 F oven until warmed through, 8 to 10 minutes.) 5. Mix together the parsley and green onions, and sprinkle over the tart. Cut the tart into 6 wedges and serve. n

Celebrate an Early-Evening New Year’s: Great Food & Entertainment

1. Arrange a rack at a center position and preheat the oven to 375 F. Have ready a 9-inch tart pan with a removable bottom. 2. For the crust: Place the flour, cream cheese, butter, salt, and cayenne in a food processor; pulse until the mixture resembles coarse meal. Remove and knead the mixture into a smooth mass and then press it with your fingers in an even layer into the bottom (not up the sides) of the tart pan. Smooth the dough with the back of a spoon. Freeze the tart shell for 15 minutes to firm, and then bake the crust until golden brown, 30 minutes. Remove the tart shell from the oven and cool for about 5 minutes but retain oven temperature.
