To kick off this new section in our newsletter, here is a new twist on the traditional pumpkin dessert for the holidays. If you have a favorite recipe you’d like to share, please email to dokacc@yahoo. com.

Pumpkin Brownies

For Brownies: 1 15-ounce can of pumpkin 1 cup vegetable oil 4 eggs 2 cups sugar 2 cups flour 1 teaspoon baking soda 1 teaspoon baking powder 1 teaspoon cinnamon ½ teaspoon salt

Preheat oven to 350 degrees. Beat together eggs, oil, pumpkin and sugar. Stir in remaining ingredients until evenly mixed. Pour into a greased and floured 9 x 13 inch baking dish. Bake for 30 minutes or until center springs back when touched. Let cool before topping.

For Cream Cheese Frosting: 1 pkg. (8 oz.) cream cheese, softened 1/4 cup (1/2 stick) butter or margarine, softened 1 tsp. vanilla 1 pkg. (16 oz.) powdered sugar (about 4 cups), sifted

Beat cream cheese, butter and vanilla in large bowl with electric mixer on medium speed until well blended. Add sugar gradually, beating until well blended after each addition. Spread evenly over brownies. Top with chopped nuts or candy corn for garnish.
