Nine Flags Bar and Grill We understand that good food brings people together. We connect with family over a savory dish, or share a dessert on the first date. We hug our friends we haven't seen in years as we meet up for drinks to reminisce about "The Good Ol' Days". These are your memories, and The Fredonia Hotel wants to make every moment special with our unique atmosphere and engaging staff! The Nine Flags, a legendary local hot spot, is perfect for unwinding by the pool, snacking on a variety of dishes– including Akaushi tacos and fried cheese curds– and catching up with old friends. Featuring live entertainment each Thursday from 7 to 10 PM, the Nine Flags will be your new favorite bar in Nacogdoches! It is the remarkable experience that you'll remember for years to come. Texas Sweet Tea, Nine Flags Bar

In addition to a variety of appetizing dishes, the Nine Flags Bar offers signature drinks to represent each of the flags that have flown over our town. Throughout the storied history of Nacogdoches, the oldest town in Texas, nine different flags have flown over the region. The six flags of Texas are well known, but three others have also been raised. The traditional six flags include those for Spain, France, Mexico, the Republic of Texas, the United States of America and the Confederate States of America. The earliest of the other flags was an emerald banner for the Gutiérrez-Magee Expedition. Lt. Augustus Magee and Col. Bernardo Gutiérrez organized an army which controlled territory east of San Antonio. However, Gutiérrez lost support, a Mexican force regained San Antonio, and the army disbanded. Another flag contained red and white stripes with one white star on a red field, representing the Long Republic. Col. James long set up a government from Nacogdoches, which fell to Spanish forces; he was later captured and killed.

The final of the three flags was red and white, and inscribed with the words "Independence, Freedom and Justice." It belonged to the Republic of Fredonia. Empresario Haden H. Edwards proclaimed a new republic following the Mexican Revocation of his colonial charter. When he failed to enlist aid, Edwards fled, ending the rebellion. The nine drinks representing flags are as follows: Tinto De Verano ~ Kingdom of Spain (1519-1821): Red wine, grapefruit juice, soda, sweet vermouth Vieux Carre ~ Kingdom of France (1685- 1689): Benedictine, sweet vermouth, Bulleit Rye Whiskey, Conjure Cognac Mexican Martini ~ Mexican Federal Republic (1821-1836): El Jimador, sweet and sour, Grand Marnier, freshly squeezed lime Pepino ~ Guitierrez-Magee (1812-1813): Cucumber Puree, St. Germain, Hendrick's Gin, lime juice Basil "Haden" Edwards ~ The Fredonia Rebellion (1826-1827): Basil Hayden Whiskey, muddled basil, lime juice, lemonade Summer Solstice ~ Dr. James Long Expedition (1819 & 1821): Gin, champagne, lemon juice, simple syrup Texas Sweet Tea ~ Republic of Texas (1836-1846): Sweet tea vodka, blueberry vodka, lemonade Southern Hospitality ~ Confederate States of America (1861-1865): TX Bourbon, honey, lemon juice Apple Pie ~ United States of America (1846-Present): Moonshine, apple juice, and cinnamon

Employee Spotlight Our hotel makes nearly all of our dishes from scratch. Just like our servers strive to deliver great service, our chefs take pride in creating flavorful dishes for our guests. "Even when it gets busy in the kitchen and you have many things to do at once, our kitchen staff is always there for each other," said our employee of the month, Chris Simon. "We are all a piece of one big puzzle, and it takes the entire staff to provide the best for our guests." "Chris was nominated for Employee of the Month due to his work ethic, friendly demeanor, and positivity," said our Food and Beverage Manager, Lucas Fandry. "He gives 100% every single day, and keeps a smile on his face!" Chris goes above and beyond in the kitchen by working late nights and early mornings. Chris also rides his bike to and from the hotel each day! In his free time, Chris enjoys gardening at his house. Chris grows tomatoes, cilantro, rosemary, broccoli, strawberries, pineapples, and more. Chris explained, "I love that every day at work I am able to learn something new that I can use at home. I love cooking for my family with fresh ingredients, just like we use at work." When Chris is working at The Fredonia, his favorite thing to do is prep work. Working with fresh, local ingredients makes our Cafe a place that Chris takes pride in." My favorite dish on the menu is our Southwest

Salad," said Chris." A delicious spring mix, black beans, roasted corn, crisp tortilla strips, pico de gallo, chicken, fresh mango, parmesan cheese, and mango vinaigrette. It's bright, fresh, and filling!" Next time you visit us at The Fredonia Hotel, stop by the 1st City Cafe and taste the difference that local ingredients and passionate employees can make.

Life is cool at our pool(s)! The sun is shining and temperatures are rising in Nacogdoches, and The Fredonia Hotel is excited to see guests swimming in our pools. Due to the timing of our grand opening (officially celebrated in August), only the most brave travelers have ventured into the water. Now that summer is in full swing, we are seeing more and more guests enjoy our oasis! The Fredonia Hotel has not only one, but two fabulous pools to swim in this summer! The Cabana pool (top) is located in the center of the hotel, right next to our 1st City Cafe and Nine Flags Bar. As shown in the mural by our front desk, this pool was a part of the original hotel design in 1955. The Cabana pool is the hub of our nightlife at The Fredonia. At The Cabana pool we host live entertainment every Thursday evening from 7 to 10 PM and for our weekly Music and Mimosas brunch events on Saturdays from 12-2 PM as you cool off in our half-submerged lounge chairs. Five years after the original opening of The Fredonia, the Oak Terrace rooms were added to accommodate more travelers. During the remodel of our property, this space was transformed from a motel-like addition to our beautiful Terrace pool area (bottom. Join us by the Terrace for dive-in movies every Friday and Saturday evening from 6:30 to 9 PM. The Terrace is perfect for large groups wanting to celebrate next to the pool and for families who enjoy having space to run around and make memories! Both The Cabana and The Terrace pools are open daily from 6 AM to 10 PM. Don't let the party stop in August– the Terrace pool stays heated year round! For more information about our pools, stop by the Front Desk!
