This Valentine’s Day, we’re bringing you three inspiring love stories from local couples who have proved that all you need is love (and a little commitment, patience, and respect). By Jennifer Holloway

Mary & Burtis Mathis Married 59 years

Mary and Burtis met by chance in the Rio Grande Valley. Burtis, fresh from the navy after World War II, got a job with AT&T (then Southwestern “It’s not a 50/50 Bell), and was shipped off to game. Both Mary & Burtis worked outside of the home to provide for their family, Mary taking nursing night shifts and Burtis working during the day, so someone was always at home with the children. After nearly 60 years of marriage, Mary and Burtis have 4 children, 8 grand children, and 16 great grand children.

Bud and Chris are classic high school sweethearts from the Oklahoma panhandle. Bud was football captain, and Chris head cheerleader. They wanted to marry right out of high school, but since Bud was under 21, he needed his parents’ consent, and his father wasn’t willing to give it until they had both learned a trade and had $500 in the bank. Nevertheless, her fears were laid to rest the minute she landed in Malawi. As she stuck her hands in the dirt fixing wells in remote villages of Malawi, more than water overflowed. Overwhelming emotions burst forth from the overjoyed villagers and tears ran freely from Theresa and her co-workers as they shared that exuberance. Before the ascent of Mt. Kilimanjaro, Theresa was affected by an intestinal parasite. Despite that, Theresa made it to the summit. Her descent was a quick 8-hour journey on a makeshift wooden stretcher atop a wheelbarrow. Immediate hospitalization was required to treat her. But none of this did anything to dampen Theresa’s spirits. She regards this challenging experience as one of life’s greatest lessons—do what you want to do, be who you want to be; don’t let physical hardship or emotional fear bring you down. Theresa is truly, a woman that’s all heart. She lost her 23 year old brother to a heart attack and she lives with a heart murmur herself. She is closely associated with the American Heart Association and is co-chairing this year’s Annual Montgomery County Heart Ball along with Stacey Bourque. She's hoping to raise record funds reaching $700,000. The event is on February 18th at The Woodlands Marriott Waterway in Texas. If you still believe that most heart attacks mimic the chest-clenching, sudden agony depicted in the movies, you may be putting yourself at risk of missing the most common signs of cardiovascular disease. Tomball Regional Medical Center is working to ensure that you don’t mistake the telltale signals. Despite what television has led us to believe, most heart attacks begin slowly, with mild pain or discomfort easily confused with other, less severe ailments. The primary symptom of a heart attack is discomfort in the chest, ranging from uncomfortable pressure to squeezing or recognizable pain. It may only last a few minutes, or go away and then return later. Pain or discomfort in other parts of the body—one or both arms, the back, neck, jaw or stomach—as well as shortness of breath, cold sweats, nausea and even lightheadedness can also be indicative of the early stages of a heart attack. These lesser known symptoms are even more common among women. The staff at Tomball Regional Medical Center urges patients to be aware of these indicators. This process may include an electrocardiogram (EKG or EGG) to determine how much damage may have been inflicted to your heart and blood tests to identify abnormal enzyme levels in the blood. If it’s clear that you are experiencing a heart attack, you may undergo certain procedures to ensure your survival. The most immediate treatment, Thrombolysis (the injection of a clot dissolving agent to restore blood flow in a coronary artery), must be administered no more than a few hours following a heart attack. Patients who do not receive immediate treatment may have to undergo coronary angioplasty (a balloon catheter used to open up the artery and improve blood flow), or coronary artery bypass graft surgery (CABG), commonly known as bypass surgery. Artery bypass surgery involves taking arteries or veins from elsewhere in the patient's body and grafting them to the coronary arteries, bypassing problematic narrowings and improving blood supply to the heart muscle. Unfortunately, recovery from a heart attack doesn’t end a bypass. In order to prevent further complications or another attack,

patients should consider participating in a cardiac rehabilitation program as part of their recovery and transition into a healthier lifestyle. Unlike patients who receive standard aftercare, cardiac rehab combines supervised exercise with medical oversight and assisted lifestyle change, resulting in a statistically lower chance of a repeat heart attack or further surgical treatment. Lifestyle changes are not just a priority for recovering cardiac patients, but also for those at risk for heart disease and heart attack. FONDUE BOURGUIGNONNE ingredients 3 pound piece boneless beef sirloin or tenderloin Cooking oil (canola or other vegetable oil) Butter directions 1. Trim the fat from the mean; cut into bit-size cubes. Keep refrigerated until 20 minutes before cooking. (Meat can be marinated). 2. Fill a metal fondue pot about 1/2 full with half oil and half butter (you can use oil only, if you prefer). Heat the oil/butter on the stove until is about 360 degrees. If you are using the butter and oil combination then heat slowly until the butter bubbles and the mixture turns a golden color.  3. Set the pot on the stand over a moderately high direct heat and maintain heat.

SEAFOOD FONDUE IN BROTH ingredients 4 cups Chicken Stock 2 tbsp Sake or Dry White Wine 1 Garlic Clove, Thinly Sliced 1 tbsp Fresh Ginger, Grated 3 tbsp Japanese Soy Sauce Salt, Pepper, and Worcestershire sauce, to taste directions 1. In a large pot over medium heat, mix the chicken stock, sake or white wine, garlic, ginger, salt and pepper and worcestershire.

3. Remove the vegetables from the water and arrange on serving plates. Keep refrigerated until fondue time.

Bring to a boil, then reduce the heat and let it simmer for about 30 minutes.

4. Rinse the scallops, shrimp and fish. Pat dry and cut into bite-size pieces. Cut the scallops into thin coins about 3 mm (1/4 inch thick).

2. In a medium pot, bring water to a boil. Add the vegetables and let them cook for about 3 minutes until their color really comes out. The vegetables won’t be fully cooked.

Mix all ingredients in medium bowl to blend. Season to taste with salt. Serve with seafood.

CHEDDAR & BEER FONDUE ingredients 6 oz Monterey Jack cheese, shredded 4 oz Gruyere cheese, shredded 4 oz sharp processed Cheddar cheese, grated 1 1/2 tbsp all-purpose flour 1 cup beer, at room temperature 1 tsp dry mustard directions In a bowl combine Monterey Jack, Gruyere, sharp Cheddar and flour; mix well to coat cheese with flour. Set aside. In a large saucepan, bring beer to a simmer over medium heat. Reduce heat to medium low. Add cheese-flour mixture by handfuls to saucepan, stirring constantly after each addition with a wooden spoon in a figure-eight motion until cheese is melted. When cheese is nearly all melted, stir in dry mustard, mixing well. Transfer to fondue pot and serve immediately with fresh baguette for dipping.

clear the air Vodka - What is vodka? Ultimately, it is the result of distilling any fermented substance. It can be made from anything containing sugar (grains, fruit, sugar, potatoes, etc.). In essence, it is purified alcohol in a ratio of 40:60 alcohol to water. This led us to the question: If vodka is so simple and similar, why do they range from $9–$40+ for the same product? We put our mouths where our money is, and started sipping.

At first, two of our testers were reluctant to sit around drinking straight vodka, as “they all taste like rubbing alcohol.” After some mild threats, they complied. By Vodka #3 all the testers were surprised that none of the samples tasted the same. Tasting notes were taken, and each vodka was rated on a scale of 1-5.

TESTING PROCESS

Five testers were given clean plastic cups with about half an ounce of neat ICE COLD vodka that had been stored in a freezer for at least 5 hours. The glasses were numbered 1–7, and filled by a third party to assure that the testing was blind. The testers were asked to focus on one sample at a time by tasting a sip of the vodka, rolling it around their mouth, then swallowing, followed by a quick wash out with luke warm water, and a larger quick gulp. We asked them to rate each vodka based on clarity, smell and flavor. Our testers quickly realized that all Vodka is clear, and we don't have discerning enough eyes to tell clear from clear. Clarity was thrown out of the test. Sorry.

Suprised? We were! Our neutral 3rd party drink pourer even let us try and guess which was which, and we got them all wrong. We were sure the top two were Grey Goose and Shevkoff. It was quickly pointed out to us (by a grumpy, brand loyal 4th party) that we obviously got these results because we are not vodka aficionados. While we may not be experts, are you? If so why are you reading this? Others may be quick to point out that cheaper vodkas have more impurities, but without a gas chromatograph it's hard to say which vodkas really have more or less impurities. Scientists are also quick to point out that while congeners (impurities) do have an effect on hangovers, the major benefactor to your morning misery is alcohol—particularly how much you consume. Some pointed out that we should try them at room temperature or with a mixer, but this would just lead to further disagreements, especially by the brand loyal. If we mixed with cranberry, someone might shoot back that it should be tonic, or orange juice, or as a martini (olive? lime?). You see where I am going with this. While this is in no way a definitive guide to Vodkas, or the end all be all of taste tests, it should open your eyes to the fact that when drinking vodka, your mouth doesn't get a chance when your eyes can't see beyond the label. You should taste around and see what best fits you.

As a country it is a confluence of famous lands and waterways, powerful rulers and ancient civilizations, traditions and an emerging modern lifestyle. Cappadocia is the far eastern region of Turkey and its people are famous as the original cave dwelling society. A short flight

out to Nevshir takes you to one of the most popular areas where the almost lunar landscape is dotted with caves in tall precipices and rock formations, showing where clans first developed. The land is mostly volcanic deposits and hermits first made cave refuges out of the easily carved ash pillars and valley walls. The city was once bigger underground than it was above and tours of the labyrinth take you back to the 5th century BC when the troglodytes first banded into their civilization. Stretching hundreds of meters underground and a constant 60 degrees, it is an eerily protective otherworld of homes, shops, mills and staggeringly impressive tunnels. The locals could hide five thousand people plus livestock for 3-4 months if marauders threatened their above ground livelihood. The caves are not to be missed on your trip! When you’ve spent enough time underground the only solution is to do the opposite and head straight up in the sky. Hot air balloon rides are a huge attraction and will be the highlight of any trip. Starting at dawn you will be surrounded by a dozen or more other balloons, watching them fill and bob until everyone races up over the city, climbing among the mountain peaks to catch the sunrise. Going up until you are enveloped in clouds is an incredibly peaceful feeling and will provide some of the greatest photos of your trip, just be sure to pack warmly! While in Nevshir we stayed at the Upper Greek House, an old stone mansion with rooms cobbled together around courtyards. They provided such attentive and home-style service that it felt like being family guests. The chilly evenings give way to exquisite views of a cloudless, star-filled sky and even from the rooftops you can hear local music in the twilight. Cappadocia is one of those unique experiences that cannot be replicated anywhere else. The locals still live in the ways of their ancestors, making their food, artisan pottery, music and daily lives in a happy blend of traditions and modern life, something we can all appreciate.

One final region that should not be overlooked is the Biblical city of Ephesus on the Mediterranean. Out here you’ll find California weather with a very bohemian vibe. Be sure to try a Hamam, which is a steam/ massage at a local Turkish bath. No day spa in the States compares to how they treat you there. Houses climb up every ridge overlooking the valley and out to the coast. This historic site is home to the great Roman Theater where Paul first spread the Gospel and gladiators fought for the glory of the arena. The façade of the Library of Efes still stands as a monument to the knowledge seekers at the end of a wide marble road. Standing on that path you will feel an overwhelming sense of history. To think of how many chariots, soldiers and barefooted natives had walked from the shores up to the markets is a powerful look back into thousands of years on one street and the crossroads of civilizations and empires. The underlying theme of any trip to Turkey is constant variety and a laid back pace. Being able to go from underground to floating in the clouds to lounging on a Med beach in a day, there is little lacking for travelers of all tastes.
