Chill parsley, eggs, garlic, onion and some salt in the refrigerator for 30 minutes. 3. Shape into meatballs and place on a foil-lined baking pan. Bake shallow 30 minutes for medium bite-size. Stick toothpicks or 25 minutes for in the finished meatballs as an appetizer. to serve

What is the best way to minimize stress when hosting an event? JESSIC A: Instead of multitasking, try prioritizing and organizing. Start by creating a game plan and a realistic time line. Instead of piling up an unmanageable workload, take on each task one at a time. MARK : Make a check list with due dates and stick to it to eliminate scrambling at the last minute.

1. Set yourself an INCLUSIVE budget. Don’t forget to take tax, service charge, or any other additional fees into consideration when setting your budget. Having that dollar amount nailed down in advance will make everything so much easier. 2. It’s never too early to secure a venue. Some venues will start filling up a year in advance! 3. The more that your venue can do for you – the better! Inclusive venues simplify planning and take more off of your to-do list. 4. No holiday party is complete without entertainment. Have your DJ put together a great holiday playlist or book a live band to keep your guests on their feet. Your entertainment selection is really going to set the tone for the event. 5. Don’t forget to deck the halls! During the holidays, it’s no secret that festive decorations are an expectation. Whether it’s simple and traditional or over-the-top extravagant, this season is the perfect opportunity to have fun and get creative with your décor.

– Jessica What is the golden rule of hosting an event? JESSIC A: That the most important part of the event is not before or during, but after. It’s not likely that your guests will remember what the décor looked like or what kind of food was served, but they will remember if they enjoyed themselves. Make it your number one goal to create an experience for your guests. MARK : Have realistic expectations and be flexible.

What is your favorite aspect of hosting an event at your hotel? JESSIC A: Creating something truly special and memorable for my guests! MARK : Watching all the details come together from weeks of planning.

1. Think about who your attendees are and plan accordingly. The parties you throw for work associates, families, children, or couples will all be different. 2. Regardless of how the food is served, the menu itself is one of the most important aspects of a successful holiday party.

he team behind Houston’s newest dog rescue has a long road in front of them. With a goal of saving 1,000 to 2,000 dogs each year, Bob Milner, Holly Dool, Donna Paparazzo, JoAnne Peek, and Kathryn McCoy are ready for the challenge of getting the Houston Animal Rescue Team (HART) up and running. Each of the founding members of HART have a wealth of rescue experience, and more importantly, they all just want to save as many animal lives as possible. HART was founded out of frustration. Frustration with the current outlook for the hundreds of animals that enter Texas shelters each day. Unbeknownst to most community members, local shelters are far from no-kill. In fact, most shelters euthanize up to 80 percent of animals that are surrendered to them. That is something that HART is working hard to change. The Tomball-based rescue will be a haven for both stray dogs and those surrendered to shelters. The rescue is depending on donations to develop its new facility, located in Tomball. The facility will be designed to keep dogs safe, happy, and healthy while they await their new forever families. Donations will fund initial construction and equipment costs. The facility, once fully developed, will feature warm cottages, sitting areas, socialization area, playgrounds, and administrative buildings. The team is uniquely qualified to take on the challenge of building a brighter future for dogs in Northwest Harris County. Holly Dool is the founder and operator of Citizens for the Animals of Midland Odessa (CAMO), and has

worked with city governments and high kill shelters to save the lives of homeless animals by getting them off of euthanasia lists. Kathryn McCoy and Donna Paprazzo built the Schnauzer Rescue of Texas (SRT), which adopts out dogs all over the state of Texas. Both organizations will continue their operations alongside HART. Bob Milner, co-owner of Mercedes-Benz of The Woodlands, got involved with animal rescues by providing ‘freedom rides’ for CAMO and SRT. Transporting dogs out of shelters and to their new forever homes was so rewarding, that Bob is now the proud parent to two rescue dogs of his own. JoAnne Peek began volunteering as a cancer survivor, to help her build morale and to give back in some way. She quickly learned that rescue work may be hard, but the rewards make it all worth it. All of the resources donated to HART directly benefit the animals in their care. From the ten dollar donations that help to pay for microchipping and rabies vaccinations to items purchased off of their Amazon wish list including exam gloves used during intake and grooming tools. There are even opportunities to sponsor a cottage or sitting area at the new facility. Volunteers are welcomed with open arms at HART, and once you meet the sweet, loving animals that are a part of the organization, you’ll understand why the founding members of HART have devoted their time and resources to making sure that each and every dog they take in finds a family of their own. With a vision and plan, anyone can make a difference; it just takes a little heart.

½ cup fresh parsley leaves, finely chopped 4 medium eggs, lightly beaten 1 medium onion, minced Salt and pepper

DIRECTIONS 1. Preheat the oven to 350°F. 2. In a large bowl or mixer, thoroughly mix the beef, pork, breadcrumbs, milk, parsley, eggs, garlic, onion and some salt and pepper. Chill in the refrigerator for 30 minutes. 3. Shape into meatballs and place on a foil-lined shallow baking pan. Bake 30 minutes for medium or 25 minutes for bite-size. Stick toothpicks in the finished meatballs to serve as an appetizer.

MEDITERRANEAN CRESCENT RING INGREDIENTS 1 10-ounce package chopped spinach, thawed and water squeezed out 1 12-ounces jar marinated artichoke hearts, chopped 1 cup shredded mozzarella cheese ½ cup garlic and herb flavored feta cheese ½ cup diced roasted red bell pepper ¼ cup finely chopped calamata olives 1 egg white, lightly beaten

2 tablespoons pine nuts, lightly toasted ¼ teaspoon fresh cracked pepper ½ cup mayonnaise 1 clove garlic, minced 2 teaspoon fresh chopped dill 2 8-ounce packages crescent rolls 2 tablespoons fresh grated Parmigiano-Reggiano cheese cooking spray

DIRECTIONS 1. Heat oven to 375°F. 2. In a bowl, use a fork to toss together the first 11 ingredients (up to, and including the dill.) Set aside. 3. On a large bake sheet sprayed lightly with cooking spray, arrange the crescent dough, separating the dough into triangles along the perforations: lay the dough triangles, overlapping slightly at the corners, so that the short end of the triangles form a circle. 4. Spoon the spinach filling around the circle formed by the overlapping dough triangles. Gently fold the long end of each triangle over the filling to form the ring. 5. Brush the dough lightly with egg white and sprinkle with Parmesan cheese. 6. Bake at 375°F for 20 minutes or until filling is heated through and crescent dough is browned and toasty. CHICKEN POT PIE BITES INGREDIENTS FOR THE PASTRY SHELLS All-purpose flour, as needed 2 (14- to 16-ounce) packages all-butter puff pastry, thawed in the refrigerator if frozen

1 large egg 1 tablespoon water

FOR THE CHICKEN POT PIE FILLING 1 1-pound bone-in chicken breast 2 teaspoons olive oil Kosher salt Freshly ground black pepper 3 tablespoons unsalted butter ¹/3 cup finely chopped celery (from about 1 medium stalk) ¹/3 cup finely chopped shallot (from about 1 medium shallot) ¼ cup finely chopped carrot (from about 1 small carrot)

3 tablespoons Cognac or dry sherry ¾ cup heavy cream ½ cup chicken stock or low-sodium chicken broth ¼ teaspoon ground sage 1 ½ teaspoons cornstarch 1 ½ teaspoons water ¹/3 cup frouncesen petite peas, thawed 1 tablespoon coarsely chopped fresh Italian parsley leaves

DIRECTIONS FOR THE PASTRY SHELLS 1. Heat the oven to 400°F and arrange a rack in the middle. Meanwhile, line 2 baking sheets with parchment paper and lightly dust them with flour. Unfold 1 pastry sheet, lay it flat on one of the baking sheets, and place it in the freezer for 15 minutes. Leave the other puff-pastry package in the refrigerator and set the other baking sheet aside. 2. Remove the pastry from the freezer and slide it onto a work surface on the parchment. Line the baking sheet with a fresh sheet of parchment and set it aside. Unfold the second sheet of pastry, lay it flat on the remaining floured baking sheet, and place it in the freezer for 15 minutes. 3. Meanwhile, use a fluted 1-¾-inch round cutter to cut 35 circles out of the first sheet of pastry, pushing straight down through the pastry without twisting. Remove the scraps and transfer the circles to the baking sheet with fresh parchment, leaving ¼ inch of space between each; set aside at room temperature. 4. Whisk together the egg and water in a small bowl until combined; set aside. 5. Remove the second pastry sheet from the freezer and slide it onto the work surface on the parchment. Using the 1-¾-inch cutter, cut 35 circles, pushing straight down without twisting. Using a fluted 1-¼-inch round cutter, cut out smaller concentric circles from the centers (if the pastry becomes too soft, return it to the freezer until firm). Remove the smaller centers and the outer scraps to reveal the puff-pastry rings. You should now have 35 larger circles and 35 rings. Place the baking sheet in the freezer until the pastry is firm, about 5 minutes. 6. Use a pastry brush to lightly brush each of the larger circles with the egg wash, working 5 pieces at a time. Place the rings on top of the larger circles, lining up the edges and pressing lightly to make them adhere. Discard the remaining egg wash. 7. Bake until browned and puffed, about 20 to 25 minutes. Using the handle of a wide wooden spoon, punch down the centers of the pastry shells. Leave the oven on. (If you’re making the pastry shells in advance, store them in an airtight container at room temperature.)

DIRECTIONS FOR THE CHICKEN POT PIE FILLING 1. Rub the chicken breast on both sides with the olive oil and season generously on both sides with salt and pepper. Place on a baking sheet and cook until an instant-read thermometer inserted in the center registers 165°F, about 30 to 35 minutes. 2. Remove from the baking sheet to a cutting board and let rest until cool enough to handle, about 20 minutes. When the chicken is ready, remove the meat from the bone, discarding the skin, cartilage, and fat. Cut the meat into ¼-inch cubes and set aside (you’ll need 1 cup). 3. Melt the butter over medium heat in a large frying pan until foaming. Add the celery, shallot, and carrot and season generously with salt and pepper. Cook, stirring occasionally, until the vegetables have almost softened, about 5 minutes. 4. Remove the pan from the heat and carefully add the Cognac or sherry. Increase the heat to medium high, return the pan to the stove, and cook until the alcohol has almost evaporated, about 2 minutes. 5. Reduce the heat to medium. Add the cream, stock or broth, and sage, stir to combine, and simmer, adjusting the heat as necessary, until the vegetables are tender, about 4 minutes. CHOCOLATE-PEANUT BUTTER SWISS ROLLS INGREDIENTS FOR THE CAKE 2 cups granulated sugar 1 cup all-purpose flour 2 tablespoons unsweetened cocoa powder 1 ½ teaspoon baking soda ½ teaspoon baking powder ¼ teaspoon kosher salt

2 large eggs ½ cup whole milk 2 tablespoons unsalted butter 1 teaspoon pure vanilla extract 1 teaspoon ground instant espresso

1 ½ sticks unsalted butter, at room temperature ¹/3 cup confectioners sugar, sifted ½ cup smooth peanut butter 1/8 teaspoon kosher salt 1 tablespoon whole milk ½ teaspoon pure vanilla extract

9 ounces bittersweet chocolate, finely chopped 1 ½ tablespoons unsalted butter, at room temperature 3 tablespoons light corn syrup Pinch of kosher salt 1 cup plus 2 tablespoons heavy cream Flaky sea salt or chopped peanuts, for garnish

DIRECTIONS 1. For the cake, preheat the oven to 325°F. Liberally grease a large rimmed baking sheet with baking spray. Line the sheet with parchment paper and liberally grease the paper. 2. In a large bowl, sift the granulated sugar, flour, cocoa powder, baking soda, baking powder and salt. In a medium bowl, whisk the eggs with the milk. 3. In a small saucepan, combine the butter, vanilla and espresso powder with ½ cup of water and bring to a simmer, stirring to dissolve the espresso. Drizzle the hot mixture over the dry ingredients. Add the egg mixture and whisk until smooth. Scrape the batter onto the prepared sheet and spread in an even layer. Bake for about 20 minutes, until set and a cake tester inserted in the center of the cake comes out clean (the cake will look wet). Transfer the sheet to a rack and let cool. 4. Meanwhile, make the filling. In a medium bowl, using a hand mixer, beat the butter with the confectioners’ sugar at medium speed until light, about 2 minutes. Beat in the peanut butter and salt, scraping down the side of the bowl as necessary. Beat in the milk and vanilla. 5. Line a large baking sheet with parchment paper and generously grease it with baking spray. Invert the cooled cake onto the prepared sheet. Peel the parchment paper off the cake; it will be sticky. Cut the cake in half lengthwise, then crosswise. Spread the filling all over the cake pieces, leaving a ¼-inch border all around the sides. Roll up the cakes lengthwise (the parchment will come off easily) to form 4 logs. Refrigerate for 1 hour. 6. Next, make the ganache. In a bowl, combine the chocolate, butter, corn syrup and salt. 7. In a small saucepan, bring the cream to a simmer. Pour the hot cream over the chocolate mixture and whisk until smooth. Let cool. 8. Line another large baking sheet with parchment paper. Cut each cake log into 3 equal pieces. Working with 1 piece at a time and using a fork or skewer, dip the logs into the ganache to coat all over, letting the excess drip off. 1. Cut one square of felt 7”x7”. Cut 4 strips of contrasting felt 7”x ¼”. Sew strips onto felt square to make a grid. 2. Cut two more pieces of felt 3”x7” and 2”x7” to make a pocket. Sew a small piece of velcro in the center of one 7” side of one piece of felt. Sew the other the other part of the velcro onto one 7” side of the other piece. Flip felt square over to the wrong side sew the 3”x7” rectangle along three sides (leaving the top edge, with velcro, open) to the wrong side of your large square with the velcro away from the outside edge. Line up your 2”x7” felt piece to overlap the bottom part of the pocket, sew onto large felt square along the top edge. 3. Random little toys/objects/ buttons/beads that you find around your house (you will want about 25 things, maybe more) Laminator sheets and home laminator, or clear contact paper.

DIRECTIONS 1. Take a picture of all your little items that are going in the bag. Also, make a list of all the items. 2. Glue the list to the back of the picture and laminate it (or use contact paper to cover) so that it will last longer than one day. Quickly hand-stitch the list/picture to a piece of ribbon and then stitch the ribbon onto the pencil pouch. 3. Put your items and your poly pellets or beads in your pencil pouch and zip it up. Then, go crazy on that zipper with the glue gun! You don’t want any little poly pellets ever falling out. Can you imagine the mess that would make? 4. All done! The other great thing about using a pencil pouch is that you can put it in a 3-ring binder…add some fun felt page games and you have a quiet book! DIY FELT BUSY PAGE MATERIALS Felt in the following colors: brown, red, green, tan, white, yellow, pink, blue, gray, purple, dark yellow Gingham fabric

DIRECTIONS 1. Cut a square that is 8½ inches by 11 inches from your white felt. This will be the base of your page. 2. Cut a piece of Gingham fabric into a rectangle measuring 8½ inches by 3½ inches. This will be your tablecloth! 3. On your gray felt, draw the shapes of a knife, spoon and fork. Make sure that your shapes fit on your Gingham tablecloth. Cut out shapes. 4. Using fabric glue, glue the Gingham tablecloth and silverware to the base page. 5. While these pieces are drying, trace the letters to spell BURGER TIME on colored felt of your choice. Cut out letters and set aside. 6. On white felt, cut out a large oval to act as your plate. This is the piece that you will measure your Burger parts by, so make sure to do this step first! 7. Using coordinating colors, cut out your burger ingredients. You can trace shapes, or cut freehand! Cut buns, lettuce, onions, cheese, burger patties, ketchup, tomatoes, bacon or any other toppings you want! Use your white fabric marker to add texture to bacon. Make sure that you cut your buns small enough to fit on to your plate, and that all toppings are the same width as your buns. 8. Glue your plate and bottom bun onto the Gingham tablecloth. Line up your BURGER TIME letters across the top of your page, and glue in place. 9. Store burger toppings in a ziplock bag. Market Street and the American Heart Association (AHA) invite the community to promote heart disease education and prevention by attending a familyfriendly Hands-Only CPR Awareness Event. The come-and-go event will be held in Market Street’s Central Park and will include CPR training by the American Heart Association, hearthealthy activities for kids and more heart fun.

This catered event features live entertainment with Tom’s Fun Band, a personal visit and printed photo with Santa, face painting, snow play, a Marionette Puppet show and letters to Santa. Guests also will have an opportunity to embellish a special frame for complimentary photos taken with Santa, share time together with various art projects in the Muse, delight in a reading of “The Night Before Christmas” and create special photos with museum props in a decorated photo booth. Tom’s Fun Band will lead the crowd singing Christmas carols, and children will be invited to write a letter to Santa to drop in the museum’s mailbox. Pre-paid Reservations only. Tickets are $15 for adults and $30 for children 12 and under.

The new dog rescue named Houston Animal Rescue Team (HART) will open in 2017. Rescued dogs will be fully vetted and, when ready, adopted out on-site at the facility, or through meetings with fosters.
