Passover Catering Reheating Instructions Reheating Instructions for Soups Chicken Soup with Matzoh Balls: 1. Matzoh balls take longer to heat than the broth, so take them out of the broth and put them in a pan with 1/8 inch of liquid (water or chicken broth). 2. Cover the pan with foil and heat in the oven at 325 degrees for 10 minutes. 3. Meanwhile, bring broth to a simmer in a pot over high heat. 4. To serve, put warm matzoh balls in bowls before adding broth. Root Vegetable Puree and Cabbage Soup:  Bring broth to a simmer in a pot over high heat, stirring frequently.

Reheating Instructions for Entrees Note: Bring all entrees to room temperature before reheating. Brisket of Beef Place brisket in a pan, and cover with foil before placing in oven to reheat at 350 degrees. Follow the following instructions based on brisket weight:  1 to 3 pounds of brisket, reheat about 20 to 25 minutes.  3 to 5 pounds, reheat about 30 to 35 minutes.  5 to 10 pounds, reheat about 35 to 40 minutes. Next, remove cover, and baste chicken with broth in pan. 3. Heat chicken, uncovered, for 10 more minutes until done. Salmon Poached or grilled salmon can be served at room temperature or warm.  To serve poached or grilled salmon at room temperature, remove salmon from refrigerator at least a half hour before plating.  To reheat grilled salmon, put in 350-­­degree oven for 5 to 8 minutes, or until heated through.  To reheat poached salmon, place in pan with a small amount of water, cover pan with foil, and reheat for 5 to 8 minutes, or until heated through.

Cornish Hens 1. Reheat Cornish hens in roasting pan with 1/8 inch of broth or water. 2. Heat uncovered in a 350-degree oven for 15 minutes.

Reheating Instructions for Gravy In microwave: 1. Place gravy in microwave-­­safe container, and heat on medium to medium-high setting for 2 minutes. 2. Remove and stir. 3. Microwave for 1 to 3 more minutes, if needed. OR On stovetop: 1. Place gravy in a saucepan. 2. Over medium-low heat, stir gravy frequently. 3. Bring to a simmer (should take 3 to 5 minutes), and remove from heat. Turkey Roulade 1. Preheat oven to 375 degrees. 2. Bake covered for 20 minutes. 3. Remove the cover and bake for an additional 10 minutes.

Reheating Instructions for Sides Tzimmes In 350-degree oven:  Reheat tzimmes in covered pan for 20 minutes, stirring occasionally. OR In microwave: 1. Reheat in microwave-­­safe container for 4 minutes on medium to medium-­­high setting. 2. Next, stir, and heat for 4 to 12 more minutes more, depending on your microwave and portion size. Mashed Potatoes In microwave: 1. Reheat in microwave­safe container for 4 minutes on high. 2. Next, stir, and heat for 4 more minutes, depending on your microwave and portion size. OR On stovetop: 1. Put mashed potatoes in pot with 1/4 cup milk. 2. Stir frequently over medium heat for 5 minutes. Rosemary Roasted Potatoes or Roasted Butternut Squash  Reheat in 350­degree oven for 15 to 20 minutes, tossing frequently.

Green Beans with Shallots or Spinach with Garlic  To serve green beans or spinach at room temperature, remove from refrigerator at least a half hour before serving.  To serve green beans or spinach warm, lightly coat a hot pan with olive oil. Add green beans or spinach and heat until warm, about 3 minutes. Honey-Glazed Carrots  Put in pan, and simmer on the stovetop over medium heat for 5 minutes. Potato Latkes  Reheat in a single layer in pan, uncovered, and put in a 350-degree oven for 8 to 10 minutes. Serve with apple sauce. Potato Kugel and Horseradish Potato Gratin 1. Reheat covered in a 350-degree oven for 15 minutes. 2. Next, uncover pan, and put back in the oven for 5 more minutes for a crispy top.
