Focused

ON YOUR

Future

Buying or selling a home is an investment in the future. Whether you’re looking for your first home, or selling the home you raised your family in, finding a real estate professional that is focused on your future is one of the most important steps to take as you begin the process. While some real estate agents are focused on a single sale, Mike Seder is dedicated to his clients’ futures. As an individual RE/MAX Agent, Seder was named the #1 Agent in the world for two consecutive years, and since forming The Mike Seder Group, his team has been named the #2 team in Texas, #3 team in the United States and #3 team worldwide. Seder’s approach to putting the needs of his clients first have helped him transform the real estate market from The Woodlands to Galveston. Seder lived in Chile as a child, where he became fluent in Spanish, and he has lived in The Woodlands for 37 years. He got his start in the real estate market as a sales agent for Ryland Homes, and quickly moved up through the company. He then joined LifeForms Homes, where he helped to design homes and neighborhoods, a skill that he brings to his clients today as they work with builders to create their dream home. What many people don’t realize when purchasing a new home is the importance of having a realtor represent them and watch out for their best interests. Mike’s extensive experience in home building and design enables him to assist his clients in their selections and process, as well as avoid costly mistakes when it’s time to resell. Seder joined RE/MAX in 1992 and has been serving clients in the community ever since. His diverse background gives him a unique perspective that allows him to guide his clients through the home buying and selling process with ease and expertise. Always goal oriented, Seder is dedicated to helping clients find a home that will be the best fit for their lifestyle. Because of his attention to detail and ability to direct clients in the right direction, he has helped grow a thriving business that is based on repeat clients and referrals. One of the ways that he works to bring value to his clients is through focusing on individual needs. The team’s property manager oversees all vacant homes on the market,

Houston’s architecture is as diverse as our population, with Queen Anne style homes, Bungalows, Craftstman homes and Folk Victorian architectural styles dominating The Heights alone. Greek Revival, Colonial Revival, Arts and Crafts, and ranch style homes dot neighborhoods

throughout the city. One of the most famous examples of Greek Revival architecture in Houston is The Nichols-RiceCherry House, which is now located in Sam Houston Park. Each of these styles represents the region, and carries its own graceful décor trends and colors.

the Bungalow Photo: houstonbungalow.blogspot.com

Photo: owenmonarch.com

Houston’s bungalows feature boxy shapes and low-pitched roofs with wide eaves. According to the Historic Preservation Manual published by the City of Houston’s Planning & Development Department, these features set the homes apart from the Queen Anne styles, which featured high-pitched roofs. An open, flowing front porch is a mainstay of bungalows, and earthy tones tend to compliment these homes beautifully. Bring a little bungalow home with soft linen looks and pretty patterns. Mod décor mixed with vintage detailing is also a great way to bring the bungalow feel home. Look for sleek lines when it comes to furniture, and fun, geometric shapes. Vintage light fixtures pull the room together, but be sure to have a licensed electrician take care of the installation. Wiring has come a long way, and your fixture may need to be updated in order to meet today’s safety standards.

the Farmhouse

If you’re eager to move out of the city, Farmhouse styles are prevalent throughout small southern towns, and can be found in some of Texas’ favorite little destinations like Round Top and Smithville. The term actually simply means a house built on a farm, but throughout the years it has taken on certain design characteristics, and is used commonly enough to have taken on its own architectural life. Woodwork, covered porches, and shiplap are some of the most popular elements in modern farmhouses. Bringing these elements home is easier than ever thanks to products like StikWood, which helps you create an accent wall in a flash. Barn lighting, woven rugs and barn door hardware are also a great way to bring the country home. You can find updated versions of barn lighting at most hardware stores, and installation is relatively simple. When it comes to décor, fresh white elements pop. Bringing in greenery and traditional furniture styles brings the whole room together. If you want something a little more eclectic, cover the walls in deep colors and bring light into the room with bright, all white art.

Greek Revival Finally, Greek Revival architectural styles are some of the most iconic structures throughout Louisiana, followed closely by Federal styles. Traditionally what you think of when you think ‘southern style’, most Antebellum structures are Greek Revival or Federal, but not all Greek Revival and Federal architecture is Antebellum. A fun piece of trivia to keep in your repertoire next time you are at a dull party and need to make conversation (who hasn’t been there?!), the Latin word ‘Antebellum’ translates to ‘before war’, and the term refers to mansions and plantation homes built in the South during the 30 years before the Civil War. Some defining traits of Antebellum architecture are grand staircases (perfect for your most dramatic entrances, of course), towering columns, balconies, ballrooms, and sweeping porches. While you can find preserved Antebellum homes in Louisiana, Tennessee, Virginia, Mississippi, South Carolina and Georgia, a weekend trip down Louisiana’s River Road will take you through 12 gorgeous plantation homes of various Antebellum styles. A quick trip from Houston, be sure to stop at Evergreen Plantation, Houmas House and Nottoway Plantation. Oak Alley Plantation also has an impressive grove of ancient oaks lining the entrance road leading to the magically framed front door. You can find elements of Antebellum architecture in modern designs closer to home, particularly through the use of Greek columns. Often mixed with Federal style details, carrying the style throughout the interior of the home is a chic, classic way to decorate, and the antique hunting that goes into decking out your home in true Antebellum fashion is a fun way to spend a weekend. Compliment décor with traditional paint colors that include shades of white and yellow, or elevate the look with fun pops of blue, purple and teal. Intricate frames and mirrors should accent walls. Try to keep original hardwood floors, original black and white tiling, and other period detailing.

AMA WATERWAYS DOURO RIVER CRUISE By Linda Bauer, author of Recipes from Historic Texas | Photos by Steve Bauer, author of Recipes from Historic Louisiana

and has amazing mahogany doors with updated baths and lovely views of the city and features an excellent staff. The Westin Palace offers a superb breakfast buffet and specialty chef offerings. Soon our group boarded a fabulous bus for a fine trip to the ship and many of the guests began sharing stories and fast friendships were being formed - one of my favorite parts of river cruising with the small number of guests, (only about seventy on that particular week).

For my milestone 200th cruise the choice was simple my favorite line - AMA Waterways in Europe. I am often told by readers that they do not want to take a cruise due to fear of getting sea sick. I always say the joy of cruising is multiplied in many ways with a river cruise with no danger of waves! It was a joy to traverse the Douro River from Madrid, Spain to Portugal on the AmaVida, the finest company that owns and operates its vessels and all are new builds. A business class flight from Houston to Madrid was purchased through AMA at significant savings, but our Delta flight was cancelled with an enormous hassle and after a day and a half I finally arrived in Spain. The short cab ride to the Westin Palace Hotel in Madrid reinvigorated me. In no time I was able to visit the Museo Nacional del Prado, Museo Thyssen-Bornemisza, and so many fine city sights, but the yellow bus tour was my very favorite. In 1912 Spanish King Alfonso XIII requested that the historic landmark, which is now the Westin Palace Hotel, be built with its famous impressive stained glass dome, “La Cupula.” It is classically decorated with antiques

The balcony in the spacious stateroom was an exceptional feature with a table and chairs perfect for watching the historic cities, majestically terraced vineyards and locks along the Douro River. AmaVida offers not only the main dining room, but also a private one and a very large second floor meeting lounge and bar for fun and relaxation. After a savory dinner, a walk around the Sun Deck enticed me to take a dip in the swimming pool, while my new pal chose the fitness center and spa for relaxation and revival. Another aspect of Ama is the complimentary in-stateroom Internet access on the huge 42 inch flat-screen television plus free newly released movies, and I watched all of them. Embarcation in Vega de Terron involved getting settled, enjoying new friends and tasting some of the fine wines and appetizers. Many of the guests raved about the pre-cruise trip to Toledo.

The first night a wonderful Spanish Folklore Show got everyone in the mood and then we had a welcome night of rest while being docked before sailing in the morning. At each port guests have a complimentary excursion with excellent local guides. Breakfast buffets offer a wide array of dishes and made to order egg dishes. Complimentary wine, beer and soft drinks are part of each lunch and dinner. Food is fresh, wholesome and abundant and the chef is happy to share recipes with his guests. The Romans and Phoenicians mined gold in the region of the Douro and transported the ore to the coast thus the name means “gold.” Others refer to the golden sheen of the reflection of the sun on the river. The Douro Valley has existed since pre-Roman days and in the 18th century the valley became demarcated and regulated. The first adventure is a tour of Castelo Rodrigo, a charming medieval settlement perched on a hill overlooking Spain, one of the twelve historic Portuguese villages. After lunch guests enjoyed a wonderful briefing by Cesario, our excellent cruise manager, about upcoming attractions, and one day he showed us an amazing way to open very expensive and rare wine. Soon we experienced the first of many locks on the cruise, and guests were enjoying the seminar on the joys of port wine, a unique fortified variety with a sweet taste. During dinner the AmaVida arrived in Pinhao with its beautiful tiled train station, and I marveled at the town in a terrific after dinner walk. After an amazing and tasty lunch the memorable afternoon was spent enjoying a 16th century village with narrow streets and winding paths and a fantastic fountain and bustling marketplace. My personal favorite was a visit to the Palace of Mateus, a Baroque style glorious structure near Vila Real. The famed rounded shaped, flask bottled wine with the amazing label and the rose was remembered by all. Imagine the afternoon spent enjoying the port wine of the region in the luxurious setting and walking through the lovely mazelike gardens with new friends and great guides. The box hedges, camellias, cedar tunnels and fountains overlooking the lovely countryside were only rivaled by the inside of the palace with its antiques, paintings and historic library. Lunch at a fine vineyard and later a wine tasting at Sandeman vineyards made for a magical day.

The choice of a day in the Lamego area included a visit to the Sanctuary of Our Lady of Remedies with the historic and religious information supplied on the individual headsets by our wonderful local guides, but I chose a magnificent picnic at Quinta da Pacheca, a superb winery on the terraced hills with an artistically and unforgettable carved tree. We learned that if you visit in the fall it is possible to watch them stomp the grapes in the granite vaults with their bare feet! Later that night was the tour of the estate and lovely gardens of Quinta da Aveleda and a dinner complete with wine of the area. Soon guests were able to enjoy the city of Porto, the second largest in Portugal. Gustav Eiffel designed the iron bridge in Porto - the Dom Luis, the final destination for the river cruise and a walking hike to visit the 16th century town complete with Baroque churches and exquisite residential areas as well as a view of the Atlantic Ocean and an amazing McDonald’s plus a fascinating Jewish section. Guimaraes, a UNESCO World Heritage site is a superb way to enjoy the Portuguese countryside and this historic city. Cork products from purses and shoes to caps are all part of the delight of shopping in Portugal. Then a visit to the historic Casa de Vila Verde offers substantial meals with a fine tasting. I love so many things about river cruising such as companionship, cuisine, staff and new friends, relaxation, exercise and history and trust you will too.

How did you get your start as a chef? I learned the business from the ground up waiting tables at 18 years old and was asked to help out in the kitchen. I loved ‘the back of the house,’ much more than ‘the front of the house’ and the rest is history. What was the first dish you mastered? Chicken Marsala. What is your restaurant known for? Jasper’s menu reflects “home cooking” style and a scratch kitchen with the best of America’s regional cuisine, including rotisserie chicken, fish, steaks, salads and pizza. We are known for our Slow Smoked Baby Back Ribs, but we just introduced a Shiner Bock BBQ Rotisserie Chicken that is outstanding! What is your favorite dish to cook at the restaurant? The “Daily Special.” It lets me be creative with what I have in the kitchen.

Phil’s Roadhouse . . . . . . . . . . . . . 26

How did you build your menu? We make our food from scratch and we use fresh, simple ingredients with a twist of smoke or a turn on our wood-fired grill.

What is one thing you find surprising about the culinary scene in the area? We are fortunate to have such a diverse range of restaurants to choose from now, where before there was very little choice in the area. We have been in The Woodlands since 2005 and we are grateful for our loyal following. We consistently offer great food and great service, and our guests keep coming back. PHIL NICOSIA Restaurant: Pallotta’s Italian Grill Position: Owner Signature Dish: The Benjamin (Linguini Pasta

tossed in a Cayenne Pepper Pavia Cream Sauce with Large Gulf Shrimp, Spicy Sausage Crumbles, Amber Butter Mushrooms, and Fresh Diced Tomatoes) How did you get your start in the restaurant business? I started out at a family owned and operated Italian restaurant in Spring, Texas back in 1991 and worked my way up to management. I then spent 5 years at a corporate Italian restaurant but I found the family-owned environment more fulfilling. In 1999, I came to Pallotta’s Italian Grill as manager and after working hard for 10 years, I was presented the opportunity to purchase the restaurant, which I did in 2009. What is your restaurant known for? Quality, CONSISTENCY, locally owned & operated, value, and innovative entrees, along with the traditional meals, as well. What is your favorite dish to cook at the restaurant? Our steamed mussels are amazing! Upon my attempt to come up with our recipe, the first broth I came up with was the winner! I am always excited to see when a guest orders them to see their expression of joy once they dig in. It’s all about the broth! What are some things you have added since taking over as owner 8 years ago? Since the day that I took over, I knew that we needed to constantly “create” reasons for guests to come back. Along with adding a new monthly featured entrée, we also added a happy hour program, cocktail menu, new wines, kid’s eat free on Mondays, a $6.95 lunch special, a completely private banquet room perfect for rehearsal dinners, and much more. What is your perfect meal at Pallotta’s? You have to start off with a bottle of the Antinori. “Il Bruciato”, an order of our La Chac La bread (homemade Italian stuffed flatbread) and the Steamed Mussels, a bowl of our creamy tomato basil soup, the shrimp brochette, and finish off with our Dominic’s Muds ice cream dessert.

ART OETTMEIER Restaurant: April Sound Country Club Position: Executive Chef Signature Dish: Tower of Power (a stacked

petite filet with crab cake and twisted shrimp, served with parmesan risotto, red pepper sauce and basil pesto)

How did you get your start as a chef? I worked in a restaurant as a teenager and I really enjoyed it. I was headed for a career in marine biology when I got the chance to go to culinary school. The first day of school I knew I found my home and I never looked back. What was the first dish you mastered? Working for a French Chef as a Saucier, the first recipe that I needed to learn was hollandaise. What is your restaurant known for? As a private club we have the flexibility to not have to follow any specific format. Because of this we can focus on seasonal foods and our daily featured items, which sell really well. What is your favorite dish to cook at the restaurant? We are in the process of developing more vegetarian options and desserts are always a favorite. What is the one ingredient you couldn’t live without? Ginger, because it is food and wine friendly and adds an intriguing flavor. What is your favorite type of cuisine? Fusion cuisine is always a favorite of mine. I like taking classic techniques and blending them into other cultures’ food. It creates an amazing adventure of taste. What is one thing you find surprising about the culinary scene in the area? I am surprised by the variety of cuisines and the skill set of the up and coming culinarians.

How did you get your start as a chef? After working several years as a Chef at Nino’s in Houston, I became Executive Chef here with Amerigo’s since 1993. What was the first dish you mastered? The first one, which is still one of our top sellers, is Snapper Amerigo’s which consists of a fresh fillet of red snapper, crabmeat, tomatoes, scallions and leeks in a reduction of Chardonnay.

What is your favorite dish to cook at the restaurant? My all-time favorite has to be the Osso Bucco which we slowly braise in a red wine reduction for 12 hours. It is a fall-off -the -bones wonderful dish. How did you build your menu? What flavors did you focus on? Our menu is built around fresh, seasonal ingredients. I import my pasta and cheese from Italy, and my seafood is delivered daily from the most reputable fish markets around. I also take advantage of the beautiful local produce found practically in our back yard. What is the one ingredient you couldn’t live without? Well, I sure wouldn’t love a world without butter. What is your favorite type of cuisine? Italian.

Restaurant: Amerigo’s Grille Position: Executive Chef Signature Dish: Snapper Amerigo’s (a fresh fillet of red snapper, crabmeat, tomatoes, scallions and leeks in a reduction of Chardonnay.)

What is your favorite “little detail” that can be found in the restaurant? We serve fresh truffles shaved table side- it’s a delicious enhancement to many dishes including filet mignon or even a side of mac and cheese. How often do you change the menu? We make changes to the menu quarterly, we bring in fresh seasonal items and we have daily features. But many of our items on the menu are classic recipes that our guests are always looking forward to when they come in.

What is your restaurant known for? Amerigo’s Grille opened its doors in 1989, establishing itself as the pioneer of culinary entertainment on Houston’s North Side. The menu is primarily classic Italian with a modern flair including wild game and fresh seafood.

How did you get your start as a chef? This is one of the main questions I get asked a lot. My father brought me into the business 4 years ago. He wanted me to learn everything I could. I have always loved to cook so the decision was easy for me. To this day I am always learning new things and love to test new food out on the staff. What is your restaurant known for? I would like to say the memory of my father. People who knew him, loved him. But we are always moving forward and I think our Blackberry BBQ sauce, Chicken fried steak and Ribeye steak are what keep people coming back for more.

What is your favorite dish to cook at the restaurant? I have so many in this place. I would say the Dijon Chicken right now. It’s always fun. How did you build your menu? My father built the menu, we have changed up a few things. What flavors did you focus on? We have so many, but when it comes to our brisket we have to make sure we get the smoke ring just right. What is the one ingredient you couldn’t live without? Our own mixture of BBQ sauce. What is your favorite type of cuisine? Italian. What is your favorite “little detail” that can be found in the restaurant? A photo of our staff and my father when you first walk in. We also hung his license plate on the wall so he would always be a permanent fixture at the restaurant.

Add pecans to salad and top with dressing. Toss to combine and serve immediately. 6. Store leftovers (dressing separate from salad) covered in the refrigerator for 2-3 days (though best when fresh). WEDNESDAY LIGHTLY ROASTED GREEN BEANS INGREDIENTS ¾ cup crushed slivered almonds ¼ cup plus 2 tablespoons freshly grated parmesan 3 tablespoon extra virgin olive oil

3 pounds French green beans 1 lemon, zested and juiced 2 garlic cloves, minced Salt and pepper to taste

DIRECTIONS 1. Prepare parmesan almond crumble by pouring almonds into a skillet and lightly toasting over medium-low heat. Once almonds begin to toast, sprinkle with parmesan and quickly stir (parmesan will begin to melt right away, so be sure to stir the mixture frequently so the cheese doesn’t burn). 2. Once mixture has toasted and melted, 3 to 4 minutes, remove from heat and allow to cool. 3. Preheat oven to 375˚F. Toss green beans in a large bowl with remaining ingredients and season with salt and pepper. 4. Spread seasoned green beans onto a large baking sheet in an even layer and roast for 30 to 40 minutes or until the green beans begin to soften and char. 5. Remove from heat, adjust seasonings and top with parmesan-almond crumble. Recipe and photo adapted from spoonforkbacon.com.

AUTHENTIC ITALIAN CHICKEN CACCIATORE INGREDIENTS 1 whole chicken 3 stalks celery 1 sprig rosemary 1 cup red wine 4 cups peeled tomatoes 1 onion, finely chopped 1 clove garlic

DIRECTIONS 1. Clean the chicken thoroughly and cut it into pieces. Don’t peel off the skin, as it will give the dish more flavor. 2. Heat the oil in a frying pan and fry the chicken pieces on both sides for about 10 minutes, until golden. 3. At this point, add the finely chopped onions, garlic, the chopped carrots and celery, with a pinch of salt, pepper and rosemary, and sauté for 5 minutes. 4. Pour red wine over the chicken and allow to evaporate. 5. Then add the tomatoes, cover with a lid and simmer on medium heat for 30 minutes (or until the chicken is well cooked and soft). 6. Once cooked, add the chopped parsley and serve the chicken with polenta or mashed potatoes. Garnish with black olives and parsley. Recipe and photo adapted from nonnabox.com.

THURSDAY SUMMER KALE + BLUEBERRY SALAD INGREDIENTS 1 small bunch kale, washed and dried 3 tablespoons olive oil ¼ teaspoon salt 1 lemon, juiced (about 2 tablespoons) 2 teaspoons honey

Freshly cracked black pepper, to taste 1 heaping cup fresh blueberries, washed and dried ¼ cup roasted sunflower seeds

DIRECTIONS 1. Remove the tough stems from the kale by pulling on the leaves through your hand to reveal the stems. Take the leaves and roll them into a tightly compacted bunch. Run your knife through the leaves to make thin ribbons, the run the knife crosswise a few times to cut them smaller. 2. Drizzle the olive oil and salt over the kale, then use your hands to aggressively massage the kale for a few minutes. Be sure to really rub them together in order to break down the fibers and soften the kale. 3. Next, juice the lemon and drizzle the honey right over the kale. Use your hands again to work the lemon, honey and pepper into the mixture to make a dressing. You can use tongs, but your hands will do a better job. Taste a piece and adjust as necessary, adding more lemon, honey, salt or oil if needed (this will depend on your taste as well as the amount of kale you started with). 4. Plate the kale, sprinkle with the blueberries and sunflower seeds and serve! Recipe and photo adapted from coleycooks.com.

Starting in the center arrange flowers, alternating flower type and trimming stems to fit vase. We placed our mini hydrangea in the center of our grid, and worked out, alternating between spray asters and spider mums. Reserve 3 to 4 spray asters (or other accent flower) to finish arrangement. The goal is to create a dome shape with flowers. If needed, remove and re-trim flowers to fit arrangement. 5. Fill in any holes with reserved spray asters. 6. If using quartz floral picks, wash and dry quartz completely. Attach quartz to end of pick using a generous amount of hot glue. Allow to dry completely and add to arrangement.

That was the night when a devastating flu pandemic arrived in the city, and within weeks, civilization as we know it came to an end. Twenty years later, Kirsten moves between the settlements of the altered world with a small troupe of actors and musicians. They call themselves The Traveling Symphony, and they have dedicated themselves to keeping the remnants of art and humanity alive. As the story takes off, moving back and forth in time, and vividly depicting life before and after the pandemic, the strange twist of fate that connects them all will be revealed. penguinrandomhouse.com
