1. Let the lamb sit out room temperatur of the refrigerator to reach e before cooking, lamb in a roasting place pan on top of a rack. the 2. Rub the lamb with olive oil and generously season both sides with salt and ground black pepper. 3. Broil the lamb until it is seared and browned, then flip and repeat for the other side. 4. REVIEWIT: Tell me how the idea of Phil’s Roadhouse & Grill was born? PHIL’S ROADHOUSE: It started with my dad, the late Phil Philipello. He loved to cook. It was his passion. He grew up in the food business with grocery stores and bakeries in the family. He first owned Boardwalk Pizza in Conroe, were he used all his own recipes in a family oriented restaurant setting. After it closed, he had the dream to open a restaurant where he would use his own recipes. Phil’s Roadhouse & Grill was born. There has only been one owner, our family. My sister, Co-Owner Angel Philipello, and I still make all of his recipes. We have now been here for two years since his passing and we’re still doing well. PHIL’S ROADHOUSE: We serve Southern style comfort food from fried to healthy. Our food is homemade from scratch with our own barbecue sauce and rubs. We smoke our barbecue every day and smoke our briskets for 24 hours.

We offer USDA Certified Aged Choice steaks from sirloins to ribs with all of our meats hand-cut. We offer fresh seafood, burgers and pork chops. One of our most popular salads is our Apple Walnut salad with candied walnuts, dried cranberries, grapes, crumbled Bleu cheese and Granny Smith apple slices on a bed of mixed greens. It is served with walnut raspberry vinaigrette or your choice of dressing. You can add chicken, shrimp or salmon to the salad.

PHIL’S ROADHOUSE: We make our own blackberry, house, and pulled pork barbecue sauces. We put together our own seasonings which include Creole, Turkey, Chicken, and Brisket rubs. It is famous all over the United States. We have guests who ask us to ship our sauce and rubs to various locations throughout the nation. REVIEWIT: Does the menu ever change? PHIL’S ROADHOUSE: Yes. We’re introducing a new menu this month, and we redo the menu every six to 12 months to let our customers try some new family recipes. We also bring back old favorites from previous menus. Some items never come off of our menu like our famous Chicken Fried steak. REVIEWIT: What are some of the drinks guests can enjoy with their meal? PASS OUT WHAT IS SYNCOPE?

Syncope (pronounced “sin ko pea”) is the medical term for fainting or passing out. It is caused by a temporary drop in the amount of blood that flows to the brain. Syncope can happen if you have a sudden drop in blood pressure, a drop in heart rate, or changes in the amount of blood in areas of your body. If you pass out, you will likely become conscious and alert right away, but you may be feel confused for a bit.

Syncope is often related to problems with the development of or changes in the Autonomic Nervous System. Autonomic Nervous System The ANS automatically controls many functions of the body, such as breathing, blood pressure, heart rate and bladder control. Most times, these things happen without us noticing.

HOW COMMON IS SYNCOPE? 4

Syncope is a common condition. It affects 3% of men and 3.5% of women at some point in life. Syncope is more common as you get older and affects up to 6% of people over age 75. The condition can occur at any age and happens in people with and without other medical problems. If you have syncope, you will likely be able to keep from fainting if you sit or lie down and put your legs up if you feel these symptoms.

Syncope can be a sign of a more serious condition. So, it is important to get treatment right away after you have an episode of syncope. Most patients can prevent problems with syncope once they get an accurate diagnosis and proper treatment. HONEY ROASTED ROOT VEGETABLES INGREDIENTS 1 ½ cups cubed red potatoes 1 ½ cups peeled, cubed sweet potatoes 1 ½ cups cubed zucchini squash 1 ½ cup sliced parsnip 1 tablespoon olive oil ½ teaspoon salt

½ teaspoon fresh thyme, chopped ¼ teaspoon ground black pepper 6 garlic cloves, peeled and cut in half 3 large shallots, peeled and cut in half 1 tablespoon honey 1 ½ teaspoon apple cider vinegar

DIRECTIONS 1. Preheat oven to 450˚F and line one large baking sheet with aluminum foil. Spray foil with cooking spray and set aside. 2. Toss first set of ingredients (the red potatoes through the shallots) until covered in oil and spices. Spread out in one even layer on prepared baking sheet and roast for 25-35 minutes, tossing halfway through, until the vegetables are browned and tender. 3. Stir together the honey and apple cider vinegar in a small bowl. Remove roasted vegetables from the baking sheet to a large bowl, pour apple cider/ honey mixture over, and toss gently to coat. LEG OF LAMB ROAST INGREDIENTS 1 leg of lamb bone-in 6 cloves of garlic, minced 2 tablespoons olive oil

3 stems of rosemary, fresh or dried Salt and ground black pepper

DIRECTIONS 1. Let the lamb sit out of the refrigerator to reach room temperature before cooking, place the lamb in a roasting pan on top of a rack. 2. Rub the lamb with olive oil and generously season both sides with salt and ground black pepper. 3. Broil the lamb until it is seared and browned, then flip and repeat for the other side. 4. Set the oven to 325˚F and place oven rack in middle of the oven. 5. Mince the cloves of garlic, mix with rosemary and pat onto both sides of the lamb. 6. Tent the roasting pan loosely with tin foil and roast until desired internal temperature (135˚F for medium rare - medium, an hour to an hour and a half). 7. DIRECTIONS 1. Preheat the oven to 375˚F. Brush the insides of the acorn squash with oil and season with salt and pepper. Place on a baking sheet and place in oven for 30-45 minutes or until acorn squash is tender. 2. Meanwhile, heat a medium skillet to medium-high heat. Add the pork sausage and cook, stirring occasionally and breaking into small crumbles with a spatula. When sausage is no longer pink and cooked through, remove and set aside in a medium bowl, leaving some of the fat in the pan. 3. Turn the heat down to medium and add the onion and celery. Sauté for 2-3 minutes, and add the mushrooms. Sauté for another minute, and add the apple. Sauté until the apple begins to soften, another 2-3 minutes. 4. Season with salt and pepper to taste. Add the vegetable mixture to the sausage and add the sage leaves and egg. Toss until well-mixed. 5. When acorn squash has finished baking, scoop mixture into the hollowed-out “bowls”. 1. Add coconut cream and dark chocolate to mixing bowl and microwave in 30-second increments until melted, stirring occasionally to incorporate. Be careful not to overheat or the chocolate can lose its creamy texture. (Alternatively, melt in a small saucepan over medium-low heat, stirring occasionally. Then transfer to a mixing bowl.) 2. Use a whisk to gently stir the mixture until it’s completely incorporated and smooth. Set in the refrigerator uncovered to chill for 2-3 hours, or until mostly firm and it holds its shape when tipped sideways. 3. In the meantime, preheat oven to 325˚F. 4. To a medium mixing bowl, add pretzel meal, sugar, and melted butter. Stir to thoroughly combine - it should be moist and moldable add more melted butter (1-2 tablespoons) if too dry and crumbly. 5. Transfer mixture to a standard 9-inch pie pan and use hands to form a uniform crust, working it all the way up the edges of the pan. 6. Bake for 12-14 minutes, or until firm to the touch and slightly browned on the edges. Set aside to cool. 7. Once the filling is chilled and mostly hardened (again, it shouldn’t run when tipped sideways), use a mixer on high to whip and incorporate air for about 1 minute, scraping down sides as needed. 8. Add peanut butter and mix once more. 9. Sample and add sweetener to taste. If you prefer a more bittersweet chocolate pie, you may not need any. 10. Mix until well incorporated, then transfer to the cooled pretzel crust and smooth the top with a spoon. 11. Cover loosely with plastic wrap and let chill for another 2-3 hours, or overnight. The longer it chills, the firmer the mousse filling becomes. 12. To serve, top with coconut whipped cream, peanut butter, crushed peanuts, and/or crushed pretzels (optional). Leftovers keep covered in the refrigerator for 3-4 days, though best within the first 1-2 days.

PASTRY DIRECTIONS 1. Whisk the flour, sugar, salt and spices in a large mixing bowl. 2. FILLING DIRECTIONS 1. Add the apples to a large mixing bowl. In a smaller bowl, mix the sugar, flour and cinnamon. 2. Pour the dry ingredients over the apples and toss to coat. 3. Add the filling to the pie plate with prepared pastry.

TOP CRUST DIRECTIONS 1. Roll out the other ball of pastry to a ¼-inch thickness and used a gingerbread man cookie cutter to make six cut-outs, and arrange them around the pie. 2. To finish, brush the top crust with the milk and sprinkle with the sugar.
