Rainbow Radish & Edible Flower Salad with Blood Orange Vinaigrette 1 5 ounce package butterhead lettuce 1 5 ounce package arugula 1 watermelon radish, thinly sliced 1 purple radish, thinly sliced 1 green radish, thinly sliced 3 rainbow carrots, shaved into ribbons, then shocked in an ice bath to set curl ½ cup snap peas, thinly sliced on the bias

In a jar, combine olive oil, red wine vinegar and oregano. Add the shallots and leave to marinate on the counter for at least 2 hours. Remove the shallots from the olive oil and set aside. Combine the orange juice, olive oil, honey and a pinch of salt and pepper in a jar and shake well until thick and smooth. Taste and adjust seasoning. In a very large bowl, toss the lettuce and arugula with about ¼ cup of the vinaigrette. Add half the radishes, carrots, peas, shallots and orange segments, then toss. Transfer to a platter. Arrange the remaining ingredients to create a colorful finish. Drizzle more vinaigrette and garnish with microgreens and edible flowers.

Rinse the sprouts and lettuce, spin dry, then arrange on plates. Combine all ingredients for the vinaigrette with a whisk or electric mixer. Drizzle the vinaigrette over each salad, sprinkle with edible flowers and serve immediately.

Salmon Risotto with Edible Flowers For the salmon 1 pound salmon (ready to cook, skinless) 2 tablespoons lemon juice Salt Freshly ground pepper 1 tablespoon clarified butter 7 ounces fresh spinach 3 tablespoons butter Nutmeg

For the Risotto: 1 shallot 1 garlic clove 2 tablespoons olive oil 1½ cups arborio rice ½ cup dry white wine 3 cups fish stock (or vegetable broth)

¼ cup freshly grated Parmesan Edible flowers (such as daisy, marigold)

Peel and finely chop the shallot and garlic. Add to a pan of hot oil and sweat until fragrant. Add the rice, sauté and pour in the wine. Allow the rice to soak up the liquid, then pour in more wine and fish stock. Repeat until the rice is cooked and the liquid gone. Rinse the salmon, pat dry and cut into bite-size pieces. Sprinkle with lemon juice and season lightly with salt and pepper. Fry the salmon in hot clarified butter for 2-3 minutes on each side. Rinse the spinach and spin dry. Heat butter in a saucepan, add the spinach and season with salt, pepper and nutmeg. Mix the remaining butter and the Parmesan into the risotto. Divide the spinach and risotto onto warmed plates, and place the fish on top. Serve garnished with edible flowers.

Spring Rolls with Carrots, Turnips, Rice Noodles & Herbs 2 ounces rice vermicelli (thin rice sticks) ¼ cup rice vinegar 2 teaspoons soy sauce 2 large carrots, peeled & grated 2 medium turnips or ½ daikon radish, peeled & grated 6 shiitake mushrooms, stems removed, thinly sliced ½ cup cilantro, chopped, plus additional sprigs

⅓ cup mint leaves, coarsely chopped, plus additional leaves ¼ cup Thai basil leaves, coarsely chopped, plus additional leaves (may substitute regular basil) Salt to taste 8 inner romaine lettuce leaves, chopped 8-8½” rice flour spring roll wrappers

Place the rice noodles in a large bowl and cover with hot water. Soak for 20 minutes, or until pliable. Meanwhile, bring a large pot of water to a boil. Drain the noodles and add to the boiling water. Boil 1 minute and drain. Rinse with cold water and transfer to a bowl. Using kitchen scissors, cut the noodles into 2-inch lengths. Toss with 2 teaspoons of the rice vinegar and the soy sauce Place the shredded carrots and turnips, slivered mushrooms and chopped herbs in a large bowl and toss with 2 tablespoons of the rice vinegar and salt to taste. Place the lettuce in another bowl and toss with the remaining vinegar and salt to taste. Fill a bowl with warm water and place a spring roll wrapper in it just until it is pliable, about 30 seconds. Remove from the water and drain briefly on a kitchen towel. Place the wrapper on your work surface in front of you and arrange several cilantro sprigs, whole mint leaves and basil leaves, vein side up, on the wrapper. Leaving a 2” margin on the sides, place a handful of the carrot mixture on the wrapper, slightly nearer to the edge closest to you. Top with a handful of lettuce, then a handful of noodles. Fold the sides in, then roll up the spring rolls tightly, squeezing the filling to get a tight roll. Refrigerate until ready to serve. Serve with a dipping sauce of your choice, if desired. Combine juice and soda water in a large punch bowl. Gradually stir in the syrup, tasting regularly until you reach the desired sweetness and fragrance. Refrigerate until it’s time to serve. Just before serving, stir in the ice and scatter the raspberries and flowers over the top.

Fresh Tomato Soup with Gruyere Croutons 5 cups of day-old rustic white bread, cut into ½” cubes 2 ounces melted butter 1½ cups grated Gruyere cheese, divided Freshly cracked black pepper 1 tablespoon ghee (or 2 tablespoons butter) ½ white onion, diced 2 medium carrots, diced 2 medium celery stalks, diced 1 sprig fresh thyme 5 medium vine ripened tomatoes, quartered 2 cups vegetable stock Fresh basil, chopped

Preheat oven to 350°F. Line a baking sheet with parchment paper. Place bread cubes in a large bowl. Combine butter and half of the cheese in a medium saucepan over medium low heat. Stir constantly until butter is just melted. Pour over bread cubes. Using your hands, toss cubes until they are coated with the butter-cheese mixture. Add the remaining cheese and season with pepper. Toss again. Spread evenly on a lined baking sheet, making sure the cheese is mostly on top of the bread cubes. Bake for 5 minutes. Give a thorough stir and bake another 5-10 minutes, or until cheese and croutons are browned. Set aside. Meanwhile, heat ghee in a large Dutch oven over medium high heat. Add onion and cook until fragrant, about 3 minutes. Add carrots, celery, and thyme. Cook until fragrant, about 3 minutes. Add tomatoes and stir. Add vegetable stock and season with pepper. Bring to a simmer, cover and cook for 25 minutes, stirring occasionally. Puree with an immersion blender (or a regular blender in batches). To serve, top with fresh basil and Gruyere croutons.

Summer Garden Fresh Cantaloupe Salsa 4 cups fresh cantaloupe, chopped into bite-sized pieces 5-6 medium tomatoes, cored and chopped into bite-sized pieces 1 cup mild pepper (bell - any color, sweet banana, cubanelle, Anaheim, etc) ½ cup spicy pepper (jalapeno, serrano, Havasu, etc)

2 cloves garlic, finely minced or pressed 1 tablespoon extra virgin olive oil Zest and juice from one lime ½ cup fresh cilantro, finely chopped Sea salt & fresh ground pepper, to taste

In a large mixing bowl, add cantaloupe, peppers, garlic and olive oil and stir to combine. Add lime zest and juice, cilantro, salt and pepper. Stir again to combine. Test for seasoning and adjust if necessary. Chill for 1-2 hours prior to serving. Give it one last stir and serve with whole grain tortilla chips or as a topping for your favorite grilled meat or fish.

Preheat the oven to 425°F. Line a baking sheet with foil. Place the focaccia bread halves on the baking sheet. Spread ½ cup of the pizza or pesto sauce evenly on each focaccia bread half. Place the spinach leaves over the sauce on both halves, then sprinkle generously with cheese. Place the mushrooms over the cheese, then lay the zucchini slices crosswise over each half. Arrange the cherry tomatoes over the pizzas, and bake for 12-15 minutes, or until the cheese is melted and the bread is crispy. Slice and serve immediately.

Carrot Cake with Cream Cheese Frosting Carrot Cake: 2 cups all-purpose flour 2 teaspoons baking powder

1½ teaspoon vanilla 3 cups grated carrots lightly packed, about 4 large carrots

¼ teaspoon baking soda ¾ teaspoon salt

Cream Cheese Frosting: 1 cup unsalted butter, room temperature 6 ounces cream cheese, full fat, room temperature 3 cups powdered sugar, sifted 1 teaspoon vanilla

1½ teaspoon ground cinnamon ¾ teaspoon ground nutmeg ½ teaspoon ground ginger Pinch of ground cloves 1¼ cup vegetable oil 1 cup dark brown sugar 1 cup granulated sugar 4 large eggs, room temperature

Preheat oven to 350°F. Grease and flour three 6” cake rounds, line with parchment. In a medium bowl, combine flour, baking powder, baking soda, spices, and salt. Set aside. In a stand mixer, combine vegetable oil and sugars. Beat until well combined, about 2 minutes. Add eggs one at a time, fully incorporating after each addition. Add vanilla. Add flour mixture in 3 parts. Remove from stand mixer and gently fold in carrots. Spread batter evenly into prepared pans and bake for 55 minutes or until a toothpick inserted into the center comes out clean. Place cakes on wire rack to cool for 10 minutes, then turn out onto wire rack to cool completely. Beat butter and cream cheese until pale and fluffy, about 2 minutes. Add powdered sugar one cup at a time, then add vanilla and beat until fluffy, about 3 minutes. Place one layer of cake on a presentation stand or serving plate. Top with approximately ⅔ cup of buttercream and spread evenly. Repeat with remaining layers. Frost and smooth the outside with a thin crumb coat. Decorate the top with a swirl and some edible flowers, if desired.

In a bowl or jar, combine chia seeds and plant-based milk and stir vigorously for 60 seconds. Add sweetener of choice and mix thoroughly. The amount of sweetener depends on the sweetness of your plant-based milk. Allow to sit for 20 minutes, stirring once in a while to break up lumps. Cover and chill in the fridge overnight. Enjoy the next morning by topping it with your favorite fruits and edible flowers.

SEE THE MARFA LIGHTS The Marfa Lights—or Marfa Mystery Lights, as some call them—are a top reason to visit Marfa, drawing visitors from around the globe for a chance to see these unexplained phenomena. Accounts of the strange spectacle just east of Marfa began during the 19th century and continue to this day. Hippocrates Health Institute By Linda Bauer, author of Recipes from Historic America Photos by Steve Bauer, author of At Ease in the White House

For two decades I have been working on a spa book and enjoying every minute, while experiencing the amazing spas throughout the world. Each destination spa offers a tremendous way to enjoy healthy living, tasty food, treatments, lectures, exercise classes, swimming pools, and some of the most interesting guests anywhere. While at the Pritikin located at Trump Doral, I met a man in the water aerobic class that said, “you must include Hippocrates Health Institute in your book, due to the fact that they are raw food vegans and very different.” He added that he knew someone who attended and beat cancer through his new lifestyle. I was intrigued and set up a three day visit, though they were sold out for accommodations on the premises, so I stayed at the nearby Hampton Inn and used their complimentary shuttle service. My first visit included a drive in my rental car to the gated spa and Hippocrates Health Institute which is located in West Palm Beach on fi fty lush acres and serving guests for twenty-seven years. I laughed when the GPS speaker announced that I should turn right on “Hypocrites Way!” The gate guard waved me in to the lovely palm treed, flowering lanes, fountained lake, casitas, villas and on to enjoy lunch at the main building. Lunch was a huge buffet of sprouts, raw vegetables, many

types of greens, and a variety of tasty salad dressings. Dining with a wonderful couple was an introduction to the institute. They had come for two weeks for the last fi ve years. The man offered to show me the entire place and soon I knew that the GPS was wrong – they were not hypocrites, just followers of the father of medicine – Hippocrates. I liked the pools, including a warm mineral pool, cold plunge and spacious swimming pool and jacuzzi, as well as numerous infrared saunas. Something that the directors, Brian Clement, PhD, LN, and his wife, Anna Maria enjoy every day throughout the year. They have been helping people for over sixty years. Brian has written twenty books and lectured in over forty countries. He touts the health benefi ts and many of the guests were diligent in enjoying the pools and infrared saunas. I then visited the library and each day read one of the many books as well as enjoyed the relaxation vibrating chair. Later I hiked one of the numerous trails, enabling guests to appreciate tranquility, while some choose to enjoy rental bikes for exercise throughout their stay. The wheatgrass shack is available for anyone at anytime to make the fresh drink though the aroma is not pleasant. Some choose instead to enjoy green drinks or teas in the main dining room. Guests are not to drink any beverage before or right after dining in order to maximize their digestive juices and not dilute them with a beverage of any kind, including water. Dinner is the same as lunch with some variety such as avocados, treats such as noodles or even frozen bananas made into ice cream. Breakfast was lemon water so the two meals – lunch and dinner were simple, tasty and for me were quite life changing. I truly felt the benefi t and loved the open seating to sit with those who shared their stories – many coming to beat cancer, Parkinson’s, MS and other health challenges. Others simply came for the lectures and healthy living or the

weight reduction program. The shop offers tons of vitamins, healthy beds, organic clothing and all types of books. A wall of pictures of celebrities was up such as Elle MacPherson, supermodel, who was on the cover of their magazine, and Anthony Hopkins as well as the late Rue McClanahan, an astronaut and many others. At the Oasis, a wonderful building, I found that Nancy, the spa director, gave an excellent lecture on essential oils with a terrific power point and fine handouts. I went to the spa afterwards and enjoyed purchasing so many of their fine oils to give to others. The spa offers every type of treatment from massages to salt scrubs to acupuncture. I enjoyed a unique treatment in a large yurt given by a man who handmade didgeridoo himself. It is an ancient Aboriginal instrument offering an array of vibrational sounds to harmonize through resonance to dissipate tensions, stress and re-balance, re-boot and realign your body. The Salon offers hair, makeup and facial treatments as well as manicures and pedicures. I had been searching for some of their products due to the fact that many are less invasive with their components and healthier for our skin and nails. Dr. Josh Helman offers his expertise in lectures about the weight loss philosophy, toxins, biofilm and attempting to eat clean food to nourish your body. He did an amazing lecture with ways to regain your health and ways to make healthy food and cleaning products. They also have treatments and a variety of health tests, biofeedback, and therapies at the lab. Another fine lecturer was Linda, who is known as Lymph Linda, telling guests how to maintain healthy breast tissue in practical and easy ways. Most guests enjoy time at the gym with plenty of classes or one-on-one lessons. Others mentioned the wonderful quiet time after dinner in their casitas as no televisions are there, allowing them to read, chat with fellow guests and relax. Executive Chef, Ken Blue, gave a terrific class on raw food techniques, dressing and sauces and ways to make raw nut milks. He also shared the recipes for guests to take home. I found most guests have lemon water for breakfast and that if you stick to the raw vegan plan it was quite simple to feed yourself, and later we made soup and vegetable sushi. I think Hippocrates would be agreeing with the institute by repeating his own quote, “let food be your medicine.”
