List of Ingredients: Fruit Salad: 1 cup julienne cut granny smith apple with peel on 1 cup julienne cut fresh pineapple 1/2 cup drained mandarin oranges 1/4 cup dried sweetened cranberries 2 teaspoons fresh lemon juice Sauce: 1/2 cup orange marmalade 3 tablespoons reduced sodium soy sauce 2 tablespoons freshly squeezed lime juice Chicken Sticks: non stick cooking spray 16- 3/4 ounce pieces boneless, skinless chicken breast (pieces should be thin and measure approximately 2 1/2 inches in length and 1 inch in width) 3/4 teaspoon salt 1/4 teaspoon freshly ground black pepper 16 lollipop treat sticks approximately 6 inches in length Preparation Steps: Combine apple, pineapple, oranges, cranberries, & lemon juice together in mixing bowl. Set aside. Stir orange marmalade, soy sauce, & lime juice together in medium skillet. Place over medium high heat. Bring to boil & cook, stirring for 2-3 minutes until sauce is reduced. It will thicken upon standing. Spray a large non stick skillet with cooking spray. Place over medium high heat. Sprinkle chicken with salt & pepper. Place in skillet. Cook 2 minutes, turn & cook additional 2 minutes or until done. Place one piece of chicken on each of the treat sticks.

To serve, place chicken skewers on a large platter. Put dipping sauce in a small bowl, place next to chicken. Spoon fruit salad onto platter (drain any excess juice). Serve. Yield: 4 servings Total Preparation Time: approximately 30 minutes
