American chocolate manufacturers use about 1.5 billion pounds of milk -- only surpassed by the cheese and ice cream industries. Rumor has it that Napoleon carried chocolate with him on all his military campaigns for a quick energy snack. American and Russian space flights have always included chocolate.

The amount of caffeine in chocolate is lower than most people think. A 1.4 ounce piece of milk chocolate contains about the same amount of caffeine as a cup of decaffeinated coffee. There is an average of 6 mg. of caffeine in both an ounce of milk chocolate and a cup of decaffeinated coffee, while a cup of regular coffee contains between 65 and 150 mg. of caffeine. A 1.5 oz. milk chocolate bar has only 220 calories. A 1.75 oz. serving of potato chips has 230 calories. A recent study indicates when men crave food, they tend to crave fat and salt. When women crave food, they tend to desire chocolate. Americans consumed over 3.1 billion pounds of chocolate in 2001, which is almost half of the total world’s production. Chocolate syrup was used to represent blood in the famous 45 second shower scene in Alfred Hitchcock’s movie, “Psycho” a scene which took 7 days to shoot.

Spring Gardening Deirdre Rose Goggins

Valentine’s Day is a wonderful reminder to start preparing your planted rose bushes and trees for spring blooms. Prune hybrid tea, grandifloras and floribundas back to a height of 2 to 3 feet or at least half its height approximately (18 inches). Shrub roses, miniatures, climbers can be pruned to the gardener’s preference. Roses do like air circulation and it is best to keep them from other large shrubs or climbers. So this is a good time to prune back surrounding plants around the roses. Established roses should be fertilized by the end of the month. If you are starting your rose garden, it is a perfect time to plant and relocate roses. Make sure to have good drainage, sunlight and the grafted union is two inches above the soil. February is also a good time to start planting and relocate perennials. It is recommended that flower beds are brought back to prime condition with removal of weeds, and unwanted turf. Turn the soil and add 4 to 6 inches of organic matter (new soil, fertilizer). Established annuals in 4 inch pots that are planted now have a better success rate. Shrub planting should be completed by February so that the plant can be established before the hot weather. Again, it is recommended to have the soil conditioned with organic matter prior to planting. Pruning can commence on most shrubs but should not be done to gardenias or hydrangeas. If you are uncertain about pruning, it is best to wait until March. Bulb planting is discouraged except for amaryllis or paper white narcissus. Trees that have been established in containers can be planted at this time. It is best to complete fertilizing your trees by the end of the month then again in mid April. Pruning of all fruit and summer flowering trees must be done by the end of the month. Lawn care should be limited to weed control for broadleaf weeds such as dandelions since most grasses are still dormant. It is not recommended to use a “weed and feed” product at this time. It is better to use a weed control aid or herbicide only. Always read the instructions on the back of the product to confirm the amount of the product to be used so that you do not damage the newly formed grass for spring. Most houseplants should be cleaned during this time to remove all dust and foreign matter on the leaves. Water your houseplants with warm temped water to void shocking the plants from cold water.

Recipe of the Month Tunnel of Love Fudge Cake Ingredients • 3 & 1/2 stickes (14 oz) of butter softened • 6 eggs • 1 3/4 cups of sugar • 2 3/4 cups of powdered sugar • 2 1/4 cups of flour • 1/2 cup chocolate chips • 1 cup unsweetened  cocoa powder • 1 1/2 cups fo chopped walnuts • 2 tablespoons of milk

Directions Preheat oven at 350 degrees, grease and flour bundt pan. Mix together butter and sugar until light and fluffy; add one egg at a time and mix well. Add 2 cups powdered sugar in batches and mix well. Stir in flour, 3/4 cup of cocoa powder, chips and nuts. Spoon into prepared pan and bake for one hour or until done Glaze: Stir together 3/4 cup powdered sugar, 1/4 cup cocoa powder and milk.   Pour on top of cooled cake and allow it to run down sides

Improvement Projects

The board was able to keep the budget in order for 2010 that has allowed us to commence a few improvement projects around the Vista Oaks HOA. We have been able to plant more trees along 1431 to increase privacy for our neighbors. The Recreational Center will have two new life guard chairs, additional pool chairs have been ordered, the meeting/rental room at the Recreational Center has been modified to accommodate different uses of the room. Tile updates at the center and mail centers and corrections made to the irrigation system.

Tips for Enjoying Networking Events By Amy Wolfgang, M.Ed.

Many of us know someone who is in the midst of a job search.  They may be looking for their first job after graduating, a new job after being laid off, or a totally new career.  Job seekers use many different avenues to find a job but one of the most effective is networking.  It is one thing to speak with your neighbor about opportunities at his or her company but, eventually, many job seekers will need to utilize different networking events. Great oppor tunities are found at networking events but, at the same time, they can be intimidating because we may not know anyone there.  Networking events can strike fear in many people, even those with outgoing personalities, so here are a few tips on how to make networking events more pleasant, less overwhelming and more productive. Tip 1:Take a Deep Breath Remember that many people are uncomfortable at networking events.  It is much more prevalent than you probably know.  With

that said, go into the event with a relaxed and positive frame of mind.  Identify how you relax – taking deep breaths, visualizing a positive experience, etc.  Employ those methods before you enter the networking event. Tip 2: Appear Approachable Smile!  If you have a smile on your face, others will be encouraged to speak with you.  Other open body language you should employ includes: • keeping your arms uncrossed • standing up straight (don’t slouch) • making eye contact with those around you While you are at the event, take notice of others’ body language.  See if you can tell what aspect of their body language makes them look either approachable or closed off.  That will help you with your own body language. Tip 3:  Utilize the Event Activities The toughest networking scenario is when you don’t

know anyone at the event and go by yourself. In this case, try to use the activities or functions at the event to your advantage. Does the event have a bar or buffet? Once you are in the food or beverage line, begin speaking to someone also in line. Are you at an art gallery? Approach a piece of art and chat about it with someone else who is also looking at it. It’s much easier to speak to people

when you already have some common ground. Networking isn’t easy and intimidates many people, however, it can lead to a powerful advantage over other job hunters!  Hopefully the tips above give you the confidence to attend networking events.  Who knows, you might really enjoy meeting new people and be surprised at the doors it opens for you!
