Athena Calderone’s recipe: Spinach and Goat Cheese Frittata Ingredients: 1/2 pound baby potatoes 10 large eggs 1/3 cup creme fraiche 3/4 teaspoon salt 3 tablespoons extra virgin

olive oil 1 leek, halved lengthwise, rinsed and thinly sliced 1 spring onion, thinly sliced 2 cups lightly packed baby spinach 3 ounces goat cheese Handful torn parsley Handful chopped dill Handful chopped chives Salt and pepper Directions: Heat the oven to 350 F. Boil the potatoes until fork-tender. When cool enough to handle, thinly slice. Whisk together the eggs,

creme fraiche and salt. Heat the oil in a 10-inch skillet, cast iron or non-stick, over medium heat. Add the leek and onion and saute until translucent. Add the potatoes and cook another few minutes. Season with salt and pepper. Stir in the spinach and cook just until wilted. Pour in the egg mixture and cook for a few minutes, pushing the cooked eggs to the center of the pan. Place in the oven and cook just until set, about 12-15 minutes. Cool slightly. Garnish with fresh herbs.

Back-to-school 101 for kids with allergies Brandpoint

There are lots of things kids get excited about when they go back to school. From brand new lunch boxes loaded with pudding cups, to shiny 64-packs of crayons and catching up with friends they haven’t seen for awhile, anticipation is in the air. But if you’re a parent of one of the 28 million children who suffer from allergies, or one of the 7.1 million children who have asthma, sending kids back to school can cause anxious moments. “Many parents look forward to their child returning to the classroom,” said allergist Janna Tuck,

spokesperson for the American College of Allergy, Asthma and Immunology (ACAAI). “But for parents of children with allergies or asthma, school raises questions about conditions that can’t be controlled or monitored. They want to make sure their child is safe, has adequate resources and that systems are in place if they have an asthma or allergy attack.” By following these suggestions from the ACAAI, you can help ensure your child has a safe, fun start to the school year. Know their triggers. Students with pets at home can bring pet dander into school. Other common allergens such as pollen and

dust will definitely find their way into the classroom. If your child suddenly develops a runny nose, has difficulty breathing or comes home with a rash, it may be related to classroom triggers. Check with your allergist if previously unseen symptoms occur or if existing symptoms worsen. Make an appointment with an allergist. If you think your child might have allergies or asthma, making an appointment with a board-certified allergist is the first step to accurately developing a game plan. An allergist can determine what’s causing your child’s symptoms, as well as provide guidance

A great size for a beginner’s garden is 10x18 feet, which can easily feed a family of four to six. However, your garden should reflect the size of your family, availability of space, amount of time you can spend tending to it and the amount of work you’re willing to do. It’s important to remember that too large a garden can easily overwhelm you and become a discouraging chore instead of an enjoyable pastime. Keep it manageable. Despite recent news that Aedes aegypti, the mosquito that can carry Zika, chikungunya and other viruses has spread to 30 states, the majority of Americans have yet to embrace basic recommendations to help reduce the mosquito population at their own homes. That’s the result of a new survey fielded by TNS Global detailing homeowners’ knowledge of steps to reduce mosquitoes in their yards. According to The Mosquito Squad Fight the Bite Report, nearly three quarters of Americans (74 percent) do not plan to modify their time outside this year, yet less than half (49 percent) follow the Centers for Disease Control and Prevention (CDC) recommendation to use mos-

quito repellent and just a third (36 percent) remove standing water, a simple task also recommended by the CDC, to reduce mosquito breeding. “Unlike chikungunya and West Nile virus, Zika has been identified as a world health crisis and we must work together on personal, local and global levels to fight mosquitoes,” says Scott Zide, a founder and president of Mosquito Squad, the largest and most experienced home and commercial mosquito control firm in the country. “Removal of standing water is the most essential tactic in mosquito elimination, yet homeowners aren’t actively removing it, which is surprising given that mosquito concerns are so high.” According to Zide, just as surprising was the find-

quitoes and increase the population. Turn over items that could hold water and trash. Look for children’s portable sandboxes, slides or plastic toys; underneath and around downspouts; in plant saucers,

empty pots, light fixtures and dog water bowls. Eliminate these items or keep them turned over until used. Remove tarps that can catch water. Many homeowners have tarps or covers on items residing in their outdoor spaces. If not stretched taut, they are holding water. Check tarps over firewood piles, portable fire places, recycling cans, boats, sports equipment and grills. Mosquito Squad suggests using bungee cords to secure tarps

in the yard. Take care of your home. Proper maintenance can be a deciding factor in property values and mosquito bites. Regularly clean out gutters and make sure the downspout is attached properly. Mosquito Squad recommends re-grading areas where water stands more than a few hours, and to regularly check irrigation systems to ensure that they aren’t leaking and causing a breeding haven. Taking the road less traveled to academic success Brandpoint

K-12 education has evolved. What used to be a linear path to academic success has expanded to a variety of nontraditional options for families and students looking to chart their own course in and after school. Schools that leverage online learning, such as full-time virtual schools, make it possible for students to pursue a top-quality education with more flexibility than the traditional classroom experience. Nationwide, more than 275,000 K-12 students in the U.S. attended online school full-time during the 2014-15 school year, according to the 2015 Keeping Pace with K-12 Digital Learning report. A new third-party public opinion poll commissioned by Connections Academy also reveals that 86 percent of parents think America’s K-12 public school students should be able to choose tuition-free online learning options. Further evidence of this shift to digital can be found in the Class of 2016, with many top graduates arriving at this important milestone via a nontraditional path - online learning. Connections Academy online schools are expected to graduate more than 4,000 students this year across 24 states - and many of those students will have completed their entire high school educations online. In fact, students who are enrolled in Connections Academy

schools for all four years of high school have a graduation rate of 84 percent. Although they traveled a unique path to their high school graduation, students and alumni assert they are experiencing the same success as their traditional public school peers. Recent 2016 graduates from Connections Academy-supported online schools were accepted to more than 690 four-year colleges and universities in each U.S. state including the District of Columbia, and others have plans to continue their education at two-year colleges or vocational schools, start careers or enter the military. Texas twins Kelley and Courtlyn Ranly chose to attend online public school Texas Connections Academy to pursue their passion for rodeo. During their high school careers the sisters have been active National Honor Society members, maintained honor roll with a 4.47 GPA (on a 4.0 weighted scale), and, recently, they celebrated their achievements alongside their peers as they served as co-valedictorians for the school’s class of 2016. Outside of school, the flexibility to schedule their classes around their extracurricular activities allowed these Texas 4-H Livestock Ambassadors to volunteer at a local veterinary clinic and raise livestock, which won them several awards at the state’s largest county fair. Courtlyn and Kelley will continue to pave their own path this summer as they

W hen traditional schools did not fit the needs of Jeffrey Crouch, who has a unique educational learning need as a visually impaired student, he joined Great Lakes Cyber Academy. Transition-

ing to online school made it possible for Jeffrey, working closely with his teachers, to pursue an individualized education. As the president of the Michigan Association of Blind Students and president of the Genesee County Chapter at the National Federation of the Blind in Michigan, Jeffrey is actively involved in advocating for equal treatment of people with disabilities, a role that’s taken him to Capitol Hill to discuss advocacy issues. Jeffrey will graduate from high school this year and intends to pursue criminal investigation as a career path.

Across the globe, international students such as Aayah Nuriddin are also turning to online schools. Aayah began attending International Connections Academy in 10th grade, after several years at an international school following her family’s move from the U.S. to Saudi Arabia. Though her parents wanted to raise the family in their home country, Aayah and her parents agreed it would benefit her long-term education goals to study an A merican curriculum. Online school has given her the flexibility to blend what she and her family

agree are the best of both worlds for her education and growth, allowing her to become a global citizen now graduating from a U.S.-based school. She has participated in International Connections Academy’s honor societies, taken advantage of college and career guidance, and says she’s benefited from learning and working with teachers with different cultural backgrounds. Locally, Aayah works with younger students through her involvement with the English Honors Society of Shangri-La. Aayah has plans to study architectural engineering at Prince Sultan University in Riyadh, Saudi Arabia. While quality and flexibility are popular drivers, many types of students are opting for online school for all sorts of reasons: there are students who simply thrive better outside the traditional classroom, others are ahead or behind their peers academically, still more benefit from greater personalization. Educators agree that online school isn’t for every student and families interested should take the time to learn about their options. Information sessions are currently taking place in many states for parents and students interested in learning more about Connections Academy-supported online public school options. A full-time online private school is also available for families who live in states where a tuition-free public online option is not available.

Kia Sorento is a large crossover with plenty of appeal and capability Kia’s Sorrento is a year into this generation, and the company couldn’t have come out with a new generation big crossover at a better time. With inexpensive gas and an improving economy – in spite of what all the presidential candidates say – people are buying the vehicle they want, and the means crossovers and trucks. So the new five- and seven- passenger utes, with decent fuel economy, plenty of capability, features and pampering touches fits many people’s bill. At the same time, Kia wants to make sure they have models across a broad customer base, so there are inexpensive versions as well. But every buyer benefits from this latest platform, in which 53 percent of the unit-body consists of high-

strength steel; more than double the previous generation. Kia also used a lot of structural adhesives, to make the vehicle stronger and more rigid. That rigidity is a big advantage for tuning the car’s handling and ride. More importantly in a vehicle such as this, it helps a lot with noise, vibration and ride harshness. But that’s not the only improvement across the entire model lineup. All five trim levels – L, LX, EX, SX and SXL – get safety features which in my view should be on any vehicle sold today. These include electronic stability control, traction control, brake assist, hill-start assist, electronic brake force distribution and antilock braking. Additional technologies such as Roll Over Mitigation and Cornering Brake Control on AWD models also were added as standard equipment. The safety value of these features –

As it is 3.1-in. longer wheelbase at 109.4-in. and its overall width is now a big bigger at 74.4 in. it is nice to discover you are driving what is essentially a

big car rather than a truck. It is tighter, more responsive and smoother than it would be if it was a bodyon-frame truck platform. And buyers can determine just how exciting a driver they want the Sorento to be by picking between three engines. Plus, there are both front- and all-wheel drive versions available with all three engines. Those engines include a 2.4-liter inline four-cylinder direct gasoline injection engine. a 3.3-liter V6 engine and finally a new 2.0-liter four-cylinder turbocharged engine. The 2.4-liter engine, generates 185-hp. and 178 lb.-ft. of peak torque. The V6 produces 290 hp. and 252 lb.ft. of peak torque. The new turbocharged engine creates 240 hp. and 260 lb.-ft. of peak torque. All Sorentos flow that power through a six-speed automatic transmission.
