He has an extensive background in construction and real estate development, which all began with a humble striping business. Beef Wellington For the Beef Wellington: 2 ¾ pound beef fillets olive oil, for frying 1 pound mixture of wild mushrooms, cleaned 1 thyme sprig, leaves only 1 pound puff pastry 8 slices of Parma ham 2 egg yolks, beaten with 1 tablespoon water and pinch of sea salt freshly ground black pepper

For the Red Wine Sauce: 2 tablespoon olive oil beef trimmings (ask the butcher to reserve these when trimming the fillet) 4 large shallots, peeled and sliced 12 black peppercorns 1 bay leaf 1 thyme sprig splash of red wine vinegar 3 cups red wine 3 cups beef stock

Wrap each piece of beef tightly in a triple layer of cling film to set its shape, then chill overnight. Remove the cling film, then quickly sear the beef fillets in a hot pan with a little olive oil for 30-60 seconds until browned all over and rare in the middle. Remove from the pan and leave to cool. 3. Finely chop the mushrooms and fry in a hot pan with a little olive oil, the thyme leaves and some seasoning. When the mushrooms begin to release their juices, continue to cook over a high heat for about 10 minutes until all the excess moisture has evaporated and you are left with a mushroom paste (known as a duxelle). Remove the duxelle from the pan and leave to cool. 4. Cut the pastry in half, place on a lightly floured surface and roll each piece into a rectangle large enough to envelop one of the beef fillets. Chill in the refrigerator. 5. Lay a large sheet of cling film on a work surface and place 4 slices of Parma ham in the middle, overlapping them slightly, to create a square. Spread half the duxelle evenly over the ham. 6. Season the beef fillets, then place them on top of the mushroom-covered ham. Using the cling film, roll the Parma ham over the beef, then roll and tie the cling film to get a nice, evenly thick log. Repeat this step with the other beef fillet, then chill for at least 30 minutes. 7. Brush the pastry with the egg wash. Remove the cling film from the beef, then wrap the pastry around each ham-wrapped fillet. Trim the pastry and brush all over with the egg wash. Cover with cling film and chill for at least 30 minutes. 8. Meanwhile, make the red wine sauce. Heat the oil in a large pan, then fry the beef trimmings for a few minutes until browned on all sides. Stir in the shallots with the peppercorns, bay and thyme and continue to cook for about 5 minutes, stirring frequently, until the shallots turn golden brown. 9. Pour in the vinegar and let it bubble for a few minutes until almost dry. Now add the wine and boil until almost completely reduced. Add the stock and bring to the boil again. Lower the heat and simmer gently for 1 hour, removing any scum from the surface of the sauce, until you have the desired consistency. Strain the liquid through a fine sieve lined with muslin. Check for seasoning and set aside. 10. When you are ready to cook the beef wellingtons, score the pastry lightly and brush with the egg wash again, then bake at 400° for 15-20 minutes until the pastry is golden brown and cooked. Rest for 10 minutes before carving. 11. Meanwhile, reheat the sauce. Serve the beef wellingtons sliced, with the sauce as an accompaniment.

Creamy Garlic Scallops 2 tablespoons olive oil 1 ¼ pounds scallops 2 tablespoons unsalted butter, divided 4-5 large garlic cloves, minced (or 1½ tablespoons minced garlic) salt and fresh ground black pepper, to taste

¼ cup dry white wine or broth (optional) 1 cup heavy cream, light, full fat or thickened cream (For a lower fat option, use evaporated milk) 1 tablespoon lemon juice ¼ cup chopped parsley

If scallops are frozen, thaw in cold water. Remove the side muscle from the scallops if attached. Thoroughly pat dry with paper towels. Heat olive oil in a large pan or skillet over mediumhigh heat until hot and sizzling. Add the scallops in a single layer without over crowding the pan, working in batches if needed. Season with salt and pepper and fry for 2-3 minutes on one side until a golden crust forms underneath, then flip and fry again for 2 minutes until crisp, lightly browned and cooked through (opaque). Remove from skillet and transfer to a plate. Melt 2 tablespoons of butter in the same pan, scraping up any browned bits left over from the scallops. Add in the garlic and cook until fragrant, about 1 minute. Pour in wine (or broth) and bring to a simmer for 2 minutes or until wine reduces by about half. Add cream and allow to simmer until slightly thickened. Remove pan from the heat; stir in lemon juice and add the scallops back into the pan to warm through slightly and garnish with parsley. Serve over rice, pasta, garlic bread or steamed vegetables (cauliflower, broccoli, zucchini noodles).

Cut off the tip of each wing and chop the wing in half. After this is done you should have about 3 pounds of chicken, with 24 to 26 pieces. Place the chicken in a bowl and mix with salt, ginger, and ground black pepper by hand. Add the potato starch into a bowl and dip each wing to coat. Squeeze each wing to adhere the coating. Heat a large non-stick skillet or wok over medium high heat. Add 2 tablespoons cooking oil, minced garlic, and the dried red chili pepper. Stir with a wooden spoon until fragrant for about 30 seconds. Add soy sauce, rice syrup, vinegar, and mustard. Stir with a wooden spoon and let it bubble for a few minutes. Add the brown sugar and continue stirring. Remove from the heat. Set aside. Put 4 cups of cooking oil in a frying pan or pot and heat it for 7 to 8 minutes over high heat. Test to see if the oil is ready by dipping a test wing into it. If the oil bubbles, it’s hot enough to start frying. Slide the coated wings one by one into the hot oil and cook for about 12 to 13 minutes, turning a few times using tongs. Remove the wings from the oil and gently shake the off excess. Turn off the heat, and let the wings sit for a few minutes. Reheat the oil and fry the wings again for another 12 to 15 minutes until they all look golden brown and feel crunchy through the tongs. If your frying pan or pot is not large enough to fry all the chicken at once, divide it into batches. If you use a larger frying pot to cook them all at once, you’ll have to use more cooking oil. When the chicken is done, reheat the sauce until it bubbles. Add the hot chicken and mix well with a wooden spoon to coat. Remove from the heat and transfer the coated chicken to a large platter. Sprinkle sesame seeds over top and serve immediately. You don’t need any dipping sauce, but it goes well with Baek-kimchi.

Bring a large pot of water to a rolling boil over high heat. Salt the water. When the salt has dissolved, add the pasta and cook until al dente. Meanwhile, in a large bowl, combine 1 ½ cups of the Pecorino Romano, the pepper, and a small ladle of pasta cooking water. Using the back of a large wooden spoon, mix vigorously and quickly to form a paste. When the pasta is cooked, use a large strainer to remove it from the cooking water and quickly add it to the sauce in the bowl, keeping the cooking water boiling on the stove. Toss vigorously, adjusting with additional hot pasta water a tablespoon or two at a time as necessary to melt the cheese and to obtain a juicy sauce that completely coats the pasta. Plate and sprinkle each portion with some of the remaining Pecorino Romano and pepper to taste. Serve immediately.

Las Vegas is one of the world’s greatest attractions. I suggest that if you have never visited that a great time of year to see the lights and listen to the sounds is the holiday season. Right now is a fine time to make plans for the upcoming trip to be a joyous sight with plenty of decorations and fun as well as smaller crowds to make your stay pleasant. I heartily recommend the Wynn with its dazzling lights, songs, flower-covered carousel and other attractions. I love the entire time of year and even though I do not gamble Vegas offers plenty to enjoy. The Wynn is a short cab ride from the wonderful McCarran Airport and suites overlooking the strip have floor to ceiling windows which are dazzling with the view of the lights, and may be concealed with automatic drapes. The enormous bathroom and fine furnishings are all part of the attraction. My favorite is the outdoor pool with its cabanas and heated waters at eighty-fi ve degrees any time of the year. The Spa and Fitness Center are all part of the charm, as well as the Claude Baruk Salon and the multitude of shops.

Restaurants include the buffet which offers immaculate facilities, friendly staff, and all you can eat with an amazing staff and loads of choices. In my thirty years as a food writer the Wynn has by far the best buffet I have ever experienced. Other choices include the Charlie’s Bar and Grill in honor of Charlie Meyerson, the favorite casino executive of Mr. Wynn, This venue offers a superb vegan burger, fries and vegan shake in a marvelous site. You get to watch sports while dining. His regular burgers are tops and the place is such fun. Sinatra’s Restaurant is a favorite Italian classic as well as Allegro in the same style. Do not miss the free light show at night at the Lake of Dreams with its water and color mélange including music. My purpose for the trip was to view the Wynn signature show, Le Reve, The Dream with its amazingly, surreal world of awe-inspiring, aquatic and acrobatic dreams with a unique story. This theater in the round offers great views from any seat and breathtaking performances. Shows include the amazing David Copperfield Theater at the MGM Resort and his skill is truly the world’s best. The theater is a super way to enjoy the talents of the illusionist and with an additional cost upgrade, which I highly recommend, to gain the best seats in the house for exquisite viewing as well as a meet and greet with Mr. Copperfield after the show. David has not only made the Statue of Liberty disappear but also walked through the Great Wall of China. Not one person that we met had figured out any of the incredible feats. He had a random ball toss to audience members and all were surprised at the results. I just want to see it again. VEGAS! The Show explains the history of the entertainers who made Vegas great and the cast offers superb songs, dances and stories. It

is truly captivating and located in the Miracle Mile Shops in part of Planet Hollywood Resort and Casino. Also in that same venue is the fantastic Popovich Comedy Pet Theater which is hilarious, clean fun for all ages. This delightful and talented man has the juggling gene and performs clown feats while directing dogs and amazing cats that he found in shelters to perform flawlessly in all types of acts. He has the skills of an acrobat, high-wire artist, animal trainer and star. What a unique time to spend in Vegas! Texan Terry Fator has his own theater in the Mirage and wows audiences anytime of the year, but twice I have been privileged to watch his Christmas show, and his unforgettable talent is superb. This man won America’s Got Talent with his unparalleled ventriloquism featuring loveable puppets such as Winston, the impersonating Turtle, President Trump, and Dougie the irascible neighbor. Terry’s talent exceeds your expectations with songs sounding like any man or woman star singer. If you close your eyes, you would say that the star is onstage. Simply the best show for all the family with humor, style, class and fun. Arrive early to enjoy the most talented DJ ever to perform for the preshow and throughout. The experience of a Terry presentation is mind boggling. I sat next to a fine young man at the David Copperfield Show, and we exchanged information with him inviting me to tour the company, Zappos, where he worked in downtown Vegas. Little did I know (and I found out the next day) that this was the owner, Tony Hsieh, who is a superstar in the business world and sold his first company in his early twenties. I visited Zappos and you are able to do the same and tour the incredible facility where customer service is headquartered in the former Vegas jail and City Hall. The day I was there a huge toy drive had been conducted and his staff was so energized, and welcoming that I wanted to stay and be a part of the dream. His bestselling book Delivering Happiness is captivating and very interesting. He also has the most ambitious plans, named the Downtown Project, using his own funds to help revitalize the downtown and make it a livable, lovely and vital place for all ages and professions to live and work. His entire concept is most interesting and is sure to include a free tour in your next trip to Vegas by contacting them at (702) 943-7879 and plan ahead as it is a major attraction. I think Vegas offers so much for everyone and the strip is part of the fun with major attractions, great swimming, walking and entertainment. One of our readers said that they go each year simply to check out the new restaurants and another said they go to see the groups on tour, so whatever your pleasure enjoy the Lights!
