This holiday adds all the hospitality and joyful customs of the fresh season. Now, deciding what’s new this month, reviewit brings you our vintage issue. Roast Rack of Lamb 2 racks of lamb (each 1½-1¾ pounds, with 7-8 ribs), frenched and trimmed of excess fat 1 cup coarse fresh bread crumbs 3 tablespoons olive oil 2 tablespoons chicken stock 2 shallots, finely chopped 2 garlic cloves, chopped ¼ cup flat-leaf parsley, finely chopped 1 tablespoon fresh thyme, finely chopped 1 tablespoon fresh rosemary, finely chopped Kosher salt & freshly ground black pepper

Pre-heat oven to 450°F. Season the racks of lamb all over with salt and pepper. 3. Place the racks of lamb bone side down in a roasting pan and roast until an instant-read thermometer inserted into the thickest part of the lamb (but not touching the bone) registers 125°F for rare or 135°F for medium rare, about 20-25 minutes. 4. While the meat is roasting, in a mediumsized bowl, combine the bread crumbs, oil, stock, shallots, garlic, parsley, thyme, rosemary, ¼ teaspoon salt and ⅛ teaspoon of pepper and mix well. 5. Pre-heat the broiler on high. 6. Pat the bread crumb mixture evenly on the meat side of the lamb. 7. Place the lamb under the broiler and broil until the topping is lightly browned, about 2-3 minutes. Watch closely...don’t let it burn! 8. Transfer the racks to a cutting board and slice the racks into chops by cutting between the bones. 9. Transfer the chops to a platter or arrange 2 or 3 chops on individual plates. 10. Easy Cucumber Sandwiches 20 slices bread ½ cup cream cheese 3 tablespoons sour cream 1 tablespoon apple cider vinegar ½ teaspoon Worcestershire sauce ½ teaspoon fine sea salt ½ teaspoon garlic powder 1.

Using a 1½ inch cookie cutter, cut 40 small circles from the bread. You can use the leftover pieces for stuffing or allow them to dry and process them into bread crumbs. You can also make croutons! Set your bread pieces aside. In the bowl of a large stand mixer or a medium mixing bowl, combine softened cream cheese, sour cream, apple cider vinegar, Worcestershire sauce, fine sea salt, garlic powder and onion powder. Lightly coat each bread piece with the cream cheese mixture. Place one thin cucumber slice on each bread piece. Top each with fresh dill sprigs, minced roasted red pepper and/or chives. You can do all three or a blend of them or none at all!

4 tablespoons unsalted butter 2 tablespoons olive oil 2 carrots, peeled and diced 2 celery ribs, diced 1 sweet yellow onion, peeled and minced 2 cloves garlic, pressed or minced 3 cups rotisserie chicken meat, cubed 4 ounces button mushrooms, cleaned & diced 1 cup frozen peas, thawed ¼ cup all-purpose flour

2 cups chicken stock or broth, low sodium or unsalted ¼ cup white wine, semi-dry or Chardonnay 1 cup heavy cream or half ‘n half ½ teaspoon kosher salt or to taste 1 teaspoon freshly ground black pepper ½ teaspoon dried thyme ¼ teaspoon ground sweet basil 1 pie crust, store bought or homemade 1 egg, beaten slightly with 1 teaspoon water

Preheat oven to 375°F. Allow pie crust to warm at room temperature, 15-20 minutes, before rolling out. Spray a 2-quart casserole dish with non-stick cooking spray. Heat butter and oil over medium-high heat until it shimmers. 4. Add diced carrots and celery and cook for 3 minutes. Add minced onions and cook until onion is translucent. Add minced garlic and cook 30 seconds. Add cubed, cooked chicken and diced mushrooms and cook 1 minute. 5. Sprinkle vegetables and chicken with the flour and cook 3 minutes, stirring continuously. 6. Stir in chicken stock and scrape the bottom of the pan to deglaze. 7. Pour in the white wine and cream. Stir well. 8. Season to taste with salt and add the pepper, thyme and basil. Stir well and continue to cook until thickened to a stew-like consistency. 9. Pour chicken stew mixture into the prepared casserole dish. 10. Roll the pie crust to ¼ inch thickness and into 1-inch strips to create a lattice top. Or, drape it over the chicken stew mixture and trim or crimp in the sides. Crab Cakes Caper Tartar Sauce: ½ cup mayonnaise ¼ cup sour cream ½ lemon, zested and juiced 2 tablespoons minced capers Salt and pepper to taste Crab Cakes: 1 pound lump crabmeat 2 roasted piquillo peppers, seeded and diced 1 ear sweet corn kernels 1 garlic clove, minced ⅓ cup panko breadcrumbs ¼ cup mayonnaise 1 egg, lightly beaten 1 tablespoon minced tarragon 2 teaspoon thinly sliced chives ½ lemon, zested and juiced Salt and pepper to taste

In a medium sized Dutch oven or heavy bottomed pot with a lid, warm oil over medium heat. Reduce heat to medium/low, add onions, cover and for 15 minutes. Remove the lid and continue to cook the onions, stirring often, until a nice golden brown color is achieved. The caramelization process should take about 30 minutes. Once the onions are caramelized, add butter, nutmeg, thyme, bay leaf, garlic, salt and pepper. Stir and cook for 10 more minutes. Increase heat to high and add wine. Bring to a boil and cook until reduced by half, about 3-5 minutes. Add stock, bring to a simmer and cook for an additional 45 minutes. Remove thyme and bay leaf. Swirl in port, or cognac depending on which flavor you like more. Preheat broiler. Divide soup into 6 ovenproof ramekins or bowls. Top each serving with a slice of bread and ½ cup grated cheese. Place under the broiler until cheese is bubbling, about 3-5 minutes. Garnish with parsley or thyme. Serve hot. Place all caper tartar sauce ingredients into a mixing bowl and whisk together. Set aside. Preheat broiler. Place all crab cake ingredients into a bowl and gently fold together until everything is evenly combined, but do not over mix. In a large skillet, melt 2 tablespoons of butter over medium heat. Drop 6 (⅓ cup sized) mounds of crab mixture into the skillet, at least ½-inch apart and cook for about 5 minutes, or until a crust begins to form on the bottom. Remove from heat and place in the oven under the broiler. Broil for 2 to 3 minutes, or until the crab cakes have browned on top. Repeat with remaining crab mixture. Serve crab cakes topped with micro-greens and edible flowers, with caper tartar sauce.

Prepare brownies according to package directions in a 13x9-inch baking dish. You want the brownies thin. Cool completely. 2. Using an ice cream scoop, scoop gelato leveling off the surface of the gelato even with the scoop to make a flat bottom. 3. Place the scooped gelato into cupcake liners and freeze until very firm. 4. With the edges of your ice cream scoop, cut out circles of brownie. Using the ice cream scoop ensures that you will have the same size circles. 5. Top each brownie circle with one of the gelato scoops. Place back in the freezer. 6. Place the sugar in a saucepan and add water just to cover the sugar. Cover and bring to a boil. Continue boiling until the sugar water is 245°F degrees. Leaving the lid on keeps the sugar from burning along the sides of the pan (the condensation drips down and keeps the sugar from sticking on the sides). 7. Whip the egg whites in a stand mixer on low until frothy, then increase the mixer speed and whip egg whites until soft peaks form. 8. With the mixer on low speed, slowly pour the boiled sugar into the soft peak eggs. Once all the sugar is poured into the egg whites, increase the speed of the mixer to high and continue to whip until the mixture has cooled and you can touch the bowl of the mixer…it will be very hot once you pour in all the sugar. The meringue will be glossy and thick. 9. When you are ready to serve, pipe the meringue using a pastry bag and tip or you can spread the mixture with a spoon, making sure to cover the brownie and gelato completely. 10. Using a culinary torch, brûlée the egg whites from a safe distance. 11. Serve immediately.

Preheat oven to 350°F. Cut the top off the apples to make a flat surface. Cut a strip of peel around the apple right next to the cut surface. Remove the core of the apples, making sure to leave the skin at the bottom intact. Brush the apples with a tablespoon of the lemon juice. In a small bowl, combine the rest of the ingredients except for the water and remaining lemon juice. Stuff apples with this mixture. Mound any remaining mixture on top of the apples. You can also cap each apple with the top that you cut off, if you’d like. Place in a shallow baking dish and pour ⅓ cup water and remaining 1 tablespoon of lemon juice around apples. Bake the apples, uncovered, for 30-40 minutes until apples are tender when pierced with a fork. Let cool 15 minutes before serving with hard sauce, ice cream, or whipped cream.

Poached Chicken: Heat chicken stock, white wine, thyme, and salt in a small pot until barely simmering. Add chicken and poach until internal temperature reaches 160°F, about 12 minutes. Set aside to rest until cool enough to handle. Cut into 1-inch cubes. Chicken a la King: Heat butter in a large skillet over medium heat. Add shallots and sweat for 2-3 minutes. Add mushrooms, bell pepper and sauté for 2-3 minutes until tender. Add frozen peas and cook to warm through. Sprinkle flour over the vegetables and stir constantly for 1-2 minutes to cook off the raw flour taste, trying to avoid browning. Stir in 1 cup of chicken stock, using more as needed to achieve desired consistency. Lightly beat one egg in a small bowl. Add 1 tablespoon of liquid from the pan and whisk with a fork to temper the egg. Repeat twice (3 tablespoons total). Move vegetables to the sides of the pan, allowing the sauce to pool to the center. Slowly drizzle in and whisk tempered egg. Add prepared chicken, along with 1 tablespoon of fresh parsley and heat through. Season with salt and pepper to taste. Serve over white toast or homemade biscuits. Garnish with fresh parsley.

1950 S High school dances of the 50s were typically informal, schoolchaperoned events. The teens would remove their shoes and dance in their socks to protect the gymnasium floor. Combined with rock ‘n’ roll, the liberating feeling of removing shoes while dancing inspirited teens to shake, jitterbug, rattle and roll giving way to a whole new style of dancing. The famous TV dance show “American Bandstand” featured brisk teenaged dancers showing off their moves.

Just like the sock hop inspired American Bandstand, we still haven’t lost our love for dance shows! So You Think You Can Dance and Dancing With the Stars are just a couple of nationwide favorites.

If you wanted a cold, refreshing drink or ice cream back in the 50s, soda fountains were the new answer. Put a jukebox, dance floor and soda fountain in a room with teenagers, and call it a party!

Even though the first drivein theater opened in 1933, it wasn’t until 1950 that the new concept became a smash among both the young and old, as well as lovers and families.

While many of the original driveins were shut down, the trend is coming back around! New driveins have opened, and those that were left standing have been restored. We’ve even got a few close to home!

We still love to socialize! When we’re not throwing a radical theme party, most of us still visit “the soda fountain” without realizing it. Our go-to restaurant, live music spot, and coffee shops all borrow ideas from the original soda fountains.

What better way to show off that you’re dating a jock than to wear his letterman jacket and sweater. Girls of the 50s made this trend their secret weapon to broadcast their prize jock.

The letter motif is still around and has become an integral part of many designer’s aesthetics. Letter sweaters are even making their own comeback.

Arch Oboler’s “Bwana Devil” stirred up the 3D craze of the 50s. It premiered in 1952 and people were provided with glasses that allowed experiencing the whole 3D effect. Sixty years later, 3D movies still get rave reviews. Hit blockbusters are still utilizing 3D technology – because it’s always fun to grab a pair of glasses and have the movie jump out at you! 1960 S Derived from Navy uniforms, bellbottoms were the fashion statement for hippies, and a trademark of the sixties era. Worn by Elvis Presley as well as Sonny and Cher, these widelegged pants became very popular with the younger generations.

The bellbottom has tried to make it back into high fashion a few times in the past, and it’s coming back around again! Get ready to go 60s!

Following the conservative 50s, miniskirts were part of the Women’s Liberation Movement of the 1960s. These short dresses reached their peak of popularity in 1967 when they became a sign of rebellion more than just a sassy fashion statement. “Showing it all” was the new trend and the past demure days went flying out of the door.

The mini skirt is still going strong! A part of most designers’ 2019 collections, you can go ahead and dig out your old favorites.

The British rock group, the Beatles, was a massive hit with kids and teens. Crazed fans would faint at their concerts. Beatlemania was so extreme that some rabid fans would even pass out just from watching them perform on TV!

The biggest boybands are still often asked about their similarities to The Beatles. The world’s love for these Brits made it cool to love boybands!

The original design was imported to the US during WWII and gained popularity from the 1950s on. In the 70s, the chairs were just about everywhere, and fit right in with the bohemian hippie aesthetic that was all the rage. The papasan makes its way back into the limelight from time to time. Bohemian designers still love to feature the piece, and you can find updated versions of it in beach homes up and down the coast.

Created in 1975, these fun little rings began as a luxury item! The price point was relatively high for the time period, and the rings were offered in silver and gold. As the trend took off, cheaper versions were made and before long everyone was wearing one! Mood rings are firmly planted in the past, but the higher-quality vintage versions can still be found in high-end consignment shops. They’ve also inspired mood fabrics, a technology brought to life in the 90s and early 2000s based on temperature!

The ultimate music experience through the 1980s, the 8-track changed the way we listen to music. It was created by a group of engineers, scientists, and professionals from Lear Jet Corporation, Ampex, Ford Motor Company, General Motors, Motorola, and RCA Victor Records.

The 8-track has been replaced many times over, but the market for old 8-tracks is on the rise! Records are still the go-to for vintage collectors, but more people are seeking out their favorite old 8-tracks for a blast of nostalgia.

This look can be credited back to the 1930s, but it wasn’t until the late 1970s when Yves Saint Laurent made the safari jacket a craze. Another invention of 1975, the pet rock might have been one of the silliest trends, but was also one of the best selling! One and a half million were sold before people realized they were paying four dollars for nothing more than a rock.

While the hottest Christmas items are a little more techsavvy than a rock in a box, Pet Rocks are still a huge pop culture reference. Any throwback show worth its weight mentions them, and we bet you remember your very own pet rock.

cruise director, probably the best we had ever seen in over 200 cruises. He is genuinely talented, energetic and is able to offer piano and singing shows in the afternoons and evenings. He has a big heart, and is beloved by the guests, as is the rest of the staff. The Shetland Islands are the first port with trips to view and pet the ponies, puffin viewing, and Lerwick, the 17th century settlement with a herring and white fish seaport. The town is most charming and sets the pace for the trip. Next, the four ports in Iceland were our true desire and each had fine views of the many geysers and waterfalls. It was the second time I had visited the Blue Lagoon; an amazing attraction. National Geographic named it one of the top 25 wonders of the world with its warm aquamarine waters, geothermal mineral and silica benefits and ethereal vapors wafting in this lagoon. It has been built up in the last eight years to include a five star resort, restaurant and plenty of places to change and spend the day. Others on the ship explored Iceland’s Golden Circle featuring bubbling mud pools, steaming vents and soaring geysers. The other two ports in Iceland highlighted the sea roots, puffins and many waterfalls from glacier melts. The ship missed the last port due to weather, but it was just whale watching and amazingly we saw them at sea and were rewarded with the addition of Tyne, as our last port. The three lecturers on board gave talks on the birds, ocean and history of the area each day and also old and recent movies were offered in the lounge for further entertainment.

Orkney was a superb town and the next day guests were treated to a trip to either Stirling Castle or a visit to the Royal Mile in Edinburgh and tour of Holyrood House, the official residence of Mary Queen of Scots. Tilbury was the pre-and post-port in London with amazing history and only our ship was in port. Any ship has you put your bags outside your door the night before you get off. Can you imagine any other place in the world where as you disembark and your bags are already on a free trolley cart and ready for you to wheel to the chartered bus for a two hour trip to Heathrow? It was a very reasonable cost of only thirty- five dollars per person in a fine bus. Just another example of the way that Voyages to Antiquity cruise line serves their guests in a fine and very generous way.
